How to make Salmon Sushi Bake - Serves 8-10
Ingredients:
250g Salmon
Olive Oil
Salt and Pepper
3 - 4 cups Sushi Rice (cooked)
2 tbsp Mirin
1 cup Sliced Crab Meat
125g Cream Cheese (softened)
1-2 tbsp Sriracha (Optional)
1/4 cup Kewpie Mayonnaise
1 tbsp Sesame Oil
2 cups Sliced Mango (or Avocado)
1 tbsp Sesame Seeds
1 packet Furikake Seasoning (approx. 25g)
Sriracha & Kewpie Mayonnaise (for drizzling)
Seaweed Wrap
Light Soya Sauce
Wasabi
Directions:
1) Pre-heat oven to 180 deg Celsius.
2) Place salmon on a baking pan and drizzle with olive oil. Season with salt & pepper.
3) Place the salmon in the oven and bake for 10-12 minutes.
4) Meanwhile, prepare the sushi rice. Add in mirin into sushi rice and mix well. Place and flatten in a 9x13" baking dish. Set aside.
5) Once the salmon is cooked, shred (using fork) then transfer into a mixing bowl. Add in the sliced crab meat. Mix well.
6) Add sriracha (optional), softened cream cheese, kewpie mayonnaise and sesame oil. Mix well.
7) Spread the salmon mixture evenly on top of the sushi rice and bake for 15-20 mins until lightly browned.
8) Put the sliced mango (or avocado) on top. Drizzle with sriracha (optional) and kewpie mayonnaise.
9) Sprinkle with sesame seeds and furikake seasoning.
10) Slice/ scoop a spoonful and wrap with roasted seaweed. Serve with light soya sauce and wasabi. Enjoy!
