How to make easy healthy Cous Cous salad || Meal prep recipe idea

This couscous salad is such a quick and easy salad to put together.
It is a great way to use up all the leftover veggies in the fridge for a fresh and hearty dish.
Whether you're looking for a quick and easy lunch option or a refreshing side dish for dinner, this couscous salad is sure to satisfy your cravings.
Recipe:
1 cup of couscous
1.5 cups of water or meat/vegetable stock
1/2 Cucumber
2 spring onions
1 cup cherry tomatoes
1/2 cup black olives
A handful of fresh basil
A handful of raisins
1 tbs salt
For the dressing:
Juice from one lemon
1/2 tsp dijon mustard
50ml olive oil
1 tsp black pepper
1 tsp salt
1 tbs maple syrup

0:34 Add hot water, salt and cover to steam
0:52 Chop the Vegetables
2:48 Add chopped veggies to couscous and mix well
3:22 Make the dressing
4:00 Pour the dressing over the couscous and mix well
