KZbin tossed you up as a suggestion for me --I recently started watching sourdough videos, lol. Have a couple starters on day 4 today --trying to different methods :) Anyway, glad I found you. Great videos! Keep it up! It's been a while since I made sauerkraut, I think this is my sign.

FYI- Place the empty bowl on the scale and press the power button /T it should zero for you, then when you add the contents into the bowl, it only shows you the weight of the contents, then zero it again before adding the salt.

Good idea! I fear the scales will time out and turn off when I'm filling. Haha. I either need more confidence or a better scales. 😅

can you water bath for long storage

You can water-bath for longer storage. But this process will kill the beneficial bacteria (probiotics) that are formed during the fermentation. I keep mine in the fridge, it stay good in there for months! 😊

Wouldn't it be better to mix the salt with the water then pour it in the jar?

You're not actually adding water; the brine comes from breaking down the cabbage with the salt. You can add water if you have to, but if you smash the cabbage enough, you'll get enough water out of it.

Yes, cabages when mixed with salt are surprisingly.. juicy. 😂. You normally don't need to add salt water. But you for sure can if needed. 😊
