Hi, kathy, These look delicious. Just wanted to share that my MIL came from Scotland and made the best shortbread I have ever tasted. People we knew felt blessed to receive it . She always used unsalted butter and rice flour. She made hers either in rounds or in two rectangles (much like the Walker Shortbread you can find in shops) This recipe looks much easier and cannot wait to try it.

Hi Kathy 🙂. I so enjoy your videos and recipes! I want to ask if this shortbread can be used as the base for strawberry shortcake? Can I leave the pecans out if using it for this purpose? I also want to let you know that I have made the almond blueberry coffee cake you presented in a video a while back. I have made it twice for our ladies Bible study at church! It is requested because they love it!

Yay! This makes me so happy. I use this shortbread to make strawberry parfait. It’s absolutely delicious!!!!!! And yes, the pecans are optional. I’m sharing a new blueberry cake soon. It’s a good one❤️

But you answered in the comments that it is 2 1/2 cups. I want it to be perfect. Can you clear this up for me? I just found your channel and will be watching often.
