❤❤ This is even better with vanilla added to it; specifically, toasted vanilla bean, the way my grandmother used to make it. With or without vanilla, this is a quick, yet elegant dessert.

Recipe: ⅓ cup water ⅔ cup sugar 2 ripe but firm Bartlett or Bosc pears (8 ounces each), peeled, halved, and cored ⅔ cup heavy cream Salt Add water to 12-inch cast-iron skillet, then pour sugar into center of skillet (don't let it hit skillet's sides). Gently stir sugar with clean spatula to moisten it thoroughly. Bring to boil over medium heat and cook, stirring occasionally, until sugar is completely dissolved and liquid is bubbling, about 2 minutes. Add pears to skillet cut side down, cover, and cook until almost tender (a fork inserted into center of pears meets slight resistance), 10 to 15 minutes, reducing heat as needed to prevent caramel from getting too dark. Uncover, reduce heat to medium-low, and continue to cook until sauce is golden brown and cut sides of pears are beginning to brown, about 3 minutes. Pour cream around pears and cook, shaking skillet occasionally, until sauce is smooth and deep caramel color and cut sides of pears are golden brown, 3 to 5 minutes. Transfer pears cut side up to serving platter and season sauce with salt to taste. Spoon sauce over pears. Serve.

I used to do these at work to top salad, but in a port wine reduction and crumbled goat cheese after to top. so AMAZING ❤

I recently read that some people can't acknowledge fruit as desert. Apple pie al a mode. Cherry pie with whipped cream. And now, this delight. Maybe fresh fruit on its own may seem skimpy to some, but I love it. And fruit is a key component to many desserts. So take that, fruit skeptics. With a banana split.:)

Made this tonight. I can't believe how the pears tasted just like some fried bananas that I recently had at a Brazilian steak house. Seriously, if my eyes were closed I would have thought I was eat those fried bananas. The pears I cooked had a bit more browning than the video and I used the Bosc variety. This is a ten out of ten recipe, my guests loved it and it was so easy.

I made this tonight with a splash of my vanilla and it was a big hit! The Carmel was a little anemic but I just need to make it a few more times and not rush the Carmel sauce. Oh and I forgot the salt but honestly it wasn't missed - I want to try this with apples! This is a new recipe in the rotation 😊

O M G this is one of the simplest recipes but so incredibly delicious! They type whose taste makes you think you've spent hours to make! Another keeper from ATK! Note: I used both Bosc and Barlett. The bartlett had so much more flavor - they weren't too hard per say - they were the tiniest bit softer than the bosc but oh my the flavor!!

I've made these a few time since I watch this to use my Cosco box of pears. We keep ending up with extra caramel so, I caramelize bananas in a little butter and put in the leftover caramel and a little vanilla the next day. This is a win.

@@TheAggromonster Trace the etymology of the word, and Car-a-mel pronunciation makes far more sense than the regionalize "car-mel" pronunciation(which largely seems to be US specific). Oxford also provides both pronunciations in reference, so your statement of "getting it wrong" can only be interpreted as cherry picking. "kärməl" is most likely a mistake in pronunciation that propagated long enough in a region to work its way into common usage. Key takeaway is that people understand the reference(even if etymology says you got it wrong a bit harder than the other guy).
