In this video I will be showing you how to make elderflower champagne.
Ingredients:
-15 flower heads
-8 L of filtered or purified water
-1 Kg of sugar or honey
-60 Ml apple cider vinegar or 2 un-waxed or organic lemons
Utensils:
-10 L plastic container
-Colander
-Cheese cloth or muslin
-Bottles
-Plastic spatula
-Pouring funnel

Have loads of elderflower by me , done a cordial my boy loves , Gona give it a whirl tonight, thanks for sharing .will have to use bottles with caps ! Hope they don’t explode !!!

Dont forget to burp your bottles daily for a week before cutting fermenting

@@LittleBlackPig thanks , I made 10L but only used 1kg of sugar ? I’ve got no gas ? Assuming I should of used 1kg per 5L ? container seemed to have mould in and white so assume fermentation was ok ?

Very easy to follow and natural. Didn't realise about the ph for stable product - thanks :) I was watching the hot bottles coming out of the oven and thought - hope you don't drop one :D

Once you have bottled the beer bottles how long will they keep out of the fridge? , as I don't have much fridge space. Many thanks for this video and the elderflower cordial video, we have 600 elderflower trees and I'm just getting my head around making products with the berries/ flowers

Hello there, first of all thank you for this ace video I must say that from the ones I watched this was the best and I liked that you went for the natural fermentation process. I tried both approaches and the citrus ones is going well... I'm going to bottle it later today but the apple cider vinegar one has developed a tiny moulds on my flowers. I've cleared the mould and put the brew through a siv/flannel to clear any unwanted bits but I am somehow concerned whether i should use this brew and bottle it or I just just chuck it. Any advice would be super helpful. I regularly brew kombucha so I'm aware that mould on these things could be dangerous, what are your thoughts on this?

Thank you, I'm so glad you enjoyed it. I'm just finishing recording how to cope with a fruit glut so move kitchen stuff on the horizon! I had a similar situation - if it's white fluff on top it's the yeast forming, I filtered and bottled mine and it takes fine

Little Black Pig ahh well I didn’t want to risk it as it was blue so maybe something has got contaminated during preparation. Never mind... 2nd batch (white elderflower, sugar and citrus) worked out very well! Fermentation took a little longer than 60 hours, it only started once bottled and they taste great but still obv fermenting! Thanks again for this video and reply! Very helpful!

Dominika Zientek blue mold does not sound good at all. Perhaps something was not sterilised properly? Glad you’re second batch went well.

When you say " sterilised " note you can sterilise equipment quickly and easily using sodium meta bisulphate, just mix it up with water, and rinse the gear .....note, it gives off fumes that sterilises the surface...don't breath in the fumes.

Currently trying your recipe for my first time making elderflower champagne, going very well so far, lots of fizz in the bottles!! Was just wondering, do you know what the alcohol content is from this recipe?

Hi Louisa, I am all set to try this with my pink flowered black elder BUT can you specify the quantities. I got 2 litres of water then add 2 jars of honey Or how much sugar? Then how much apple cider vinegar? Or how many lemons/oranges? I don’t have a ph meter to check if it’s below 4.4. Also, can you use any container? I don’t have any ribs so would be using a stainless steel stockpot or aluminium jam pan as that’s the largest thing I can find. Thank you

Hanna Rees-Jones Hi , the quantities of sugar , citrus and acv is all in the video. If you follow it correctly your pH should be good. The video also explains bottling as well. You can use washed clean plastic soda bottles if you don’t have spring top glass bottles.
