Recipe: How to Make Escarole and Beans
1 or 2 large can of Cannellini beans
4 - 5 cloves of garlic
¼ cup olive oil
2 large bunches of escarole or 4 small bunches
Pepper flakes (optional)
Grated Cheese
Cut ends off escarole. Immerse escarole in large pot of cold water, drain in colander. Do this two or three times until you are sure the escarole is clean and free of dirt.
Cut up garlic and place in large pot with pepper flakes (if desired). Wait until the garlic starts to sizzle a bit. Place escarole in pot and cover. Let escarole cook for about 6-7 minutes. Add Cannellini beans sand salt to taste. Mix and allow escarole and beans to cook for about 10 minutes.
Serve in large bowl sprinkled with grated cheese and enjoy with a loaf of crusty bread.
