Can you explain how you use two baking steels? Are you stacking them or using one on a lower rack and the other on a high rack and cooking in the middle. I have one full size baking steel that I am currently using on the lower rack

The couple of times I did this my family complained the bagels were “too yeasty”. Personally it didn’t bother me, any advice on how to address? Maybe less active dry yeast?

They want bread not bagels. I worked at bagels shops making bagels when i wasnt old af. Dough is made at least the day before. The yeasty flavor is from the dough fermenting. You could probably make some plain sane day bread circles with just proofing.
