Just wanted to let anyone who's looking for a suffid (cooling mat) know that I got the sefed and the large seteta at Brundo Market online. If you're paying for the shipping you might want to get both of them, as the sefed is thicker than the seteta and might be too thick to get the injera off the grill without scratching it but is good for cooling. Also, I found that using distilled water instead of tap water made a huge positive difference in the fermentation. I didn't actually use a starter, but left out the teff flour and water on the countertop for 2 days. Another thing that made a big difference was mixing in a little baking powder, about 1/3-1/2 tsp, to each cup right before cooking it, since my version was gluten-free and didn't have self-rising flour. This transformed the injera from a gooey mess into a cohesive round pancake with lots of "eyes" even when I poured the batter into a corner of the grill. Thank you for posting this video, as I never would have been able to make the injera without all of your tips. Although my final version was tweaked to account for wanting it to be gluten-free, the basics came from your shared experiences and your efforts in making this excellent video are much appreciated!

You can make injera with 100 percent Teff if you want, you just need to add a little bit of bread yeast along with the starter at the beginning and do absit 6 hours before when you are ready to bake the injera. Add a teaspoon of baking powder when the batter is ready to be baked. I have tried this method many times and it works like a charm to get beautiful 100 percent Teff injera.

I really appreciate the way you make it. I am from Eritrea, I was making good injera while I was back in my home country. Since I am here in North America I am not able to make good injera. Wow, you are so amazing awesome guy! You know what? I am Habesha one of those people who feed injera traditionally. When I was in back home it was easy for me to make injera using the normal tools Mogogo and so on, after I came to western I don’t know whether it is from the type of flour or weather. The injera I tried to meake wasn’t good and was terrible to eat (wasn’t testy as usual) and finally I left to make. So your video was very helpful to initiate me and try it again. Your video was very helpful. I had tried injera a week or so earlier, but it wasn't very good. So I looked at some videos, found yours, and tried again, with a mixture of ivory and brown teff flours and an established gluten free sourdough starter (brown rice flour). I have a Tibos electric crepe/dosa griddle (13") which worked pretty well. Your guidance was much appreciated. Thank you for your effort in making the video.

Chad, your skill of making injera is amazing!!! I used to make the best (as my family used to say and my father talks about it to this day... "Eyenu betam yamare sis enjera," (to mean perfect uniformed small holes aka eyes that is thin, for my father didn't like thick enjera) when I used to live in Addis, but it's been a real struggle trying to make it here in the US. I've been using only teff flour. I'm going to try your recipe and see how that will work... Your Amharic is impressive as well. Your family is blessed to have you! God bless.

Your dog looks like it was wondering when the injera was going to be ready :) Great video, thanks for putting the time and effort into putting it all together. I tried making injera for the first time last night and it wasn't great, I followed a recipe that called for only teff flour, I fermented the dough for 24 hours, it still tasted great, but wasn't like the injera i had in restaurants. I will try this next time.

Most restaurants will not use only Teff flower they will always add self-rising flower. Teff can be harsh at times with bitterness, you will offset it by adding white flower such as self-rising flower.

Oh yes they add self rise because one teff is expesive two they couldn't do it teff alone teff alone sweet injer with out adding any thing on it if you do it afelenga injera that is injeras other way of making it to minimize the soureness you just make the dough and do make injera with out letting the fermentation to take longer time cut the process then you get injera that actualy test sweet we do it in ethiopia for people who have problem on thire stomach

Yes. You can make it with all teff. It's hard to make it just like Ethiopia with all teff. It did turn out good when I used all teff but it was more dry and my family preferred the injera with the mixed flours.
