Hej Sue I'm Mina😊 Thank for the recipe. I have a question, it doesn't need water? I also used the cabbages that are for kimchi and salted the cabbage leaves until they were soft and then washed them, in that case should I add salt again?

Hi Mina, natural fermentation doesn’t need water. The rule I learnt was 1.4% of salt. Eg 14g salt per kg. So it depends on the weight overall. The salt and sugars activate liquid diring the fermentation process. I have a kimchi recipe I must share soon.
