I hope my recipe helps. A tip watch that the pot isn't boiling too high. If you run out of water just add a little bit extra. You can also cook it in the microwave.

Hi I was just looking at your website. You said that soba noodles were made out of buckwheat. I thought yahoo, I can have noodles. But no the soba noodles are wheat flour 69% and buckwheat flour is only 29% which makes them high in carbs

Thank you for pointing that out. I have now made a note on my website to clarify. Some cheaper brands of soba noodles may be a combination of buckwheat flour and wheat flour check the packet before buying them if you are avoiding wheat. I have been caught out buying a supermarket brand once. Premium brand soba noodles should be 100% buckwheat flour but they will be more expensive.

It's so good! I look this recipe. Definitely not bland. I am a taste sensitive snob. I dislike bland tasteless food. This bread has a mild nutty taste and not crumbly at all. We only eat it toasted on medium and it’s soft and light. There’s not a great taste difference between both recipes. Adding gf oats adds a slight texture. The other with a little black buckwheat flour a tiny amount a extra flavour but very subtle. Please try it and let me know. Ps I made an overnight soaked whole buckwheat groats bread once 2 ingredients just water. That was disgusting and I threw it out. Happy baking ❤️

funny how you need flaxegg for speltflour. The gluten structur in spelt is not so strong as modern wheat. I can tolerate spelt but not modern wheat. A lot of ppl tolerate ancient wheat (spelt, emmer and einkorn) but not modern wheat. It's not glutenintolerance, because ancient wheat contains gluten. It's the GMO (modern) wheat, that triggers our immunesystem, because the DNA has been so altered that it's foreign to our bodies. Ancient wheat has remained original (untouched/natural) in their genetic code. Research Carla Bartolucci (founder of Jovial) here on yt. You welcome - for all the 'gluten-intolrant' ppl that can eat wheat again.

Oh I am not sure that will work. Teff is tricky to bake cakes or muffins both vegan & gluten free. I have found the texture is not quite right. It’s a little gummy.

Looks tasty & not that difficult to make. I recently found out I am wheat intolerant. Idk if I can have other glutens or not. Spelt flour is usually tolerated well bc it’s an ancient grain. My mother & Aunt have celiac disease. Gluten really is harmful to them. Thanks for the info . Keep up the good work!❤

Hello Daisy I tested aquafaba. It worked but with a few changes. My aquafaba weighed 130g. My cookie mixture seemed wetter so I chilled it in the fridge overnight. They took an extra 5 minutes to bake. I hope you try it now!

👋 hello I have a question do I not need to wait 10 minutes for the yeast to active and see bubbles before mixing? I'm new to baking bread I was just wondering because this is a step that's used in making just regular Loaf bread. Is this step not needed because it's spelt flour?

It depends where you live and what the yeast is called. If you’re using fast dried yeast no need to wait you add this directly into the flour. If you’re using active dry yeast then yes. Here in Sweden now I add the dry yeast straight into the flour and it seems to still work. So I reckon it’s fast yeast. In mu early days of baking bread and some of my earlier videos I thought waiting was the way to go but it really depends on the brand of yeast. Another tip what the packet says. I hope that helps.

In Latvia i was served buckwheat mixed with berries and nuts baked in a 9x13 pan. Dish up some warm with a little fruit yogurt on it and it was an excellent breakfast

I just used this recipe to bake hotdog buns for the first time. My husband was looking for hotdog buns, but even at the health based grocery stores its hard to find ones with few ingredients and that isn't made with vegetable oil. So I decided to make my own. I often use your spelt flour bread recipe so I was glad to see that you have one for hotdog buns. I did tweak the recipe and substituted 100 grams of the spelt flour for organic white flour. And I just used the white spelt flour that I have on hand, instead of two kinds. I used canned coconut milk as my milk. After having a taste test fresh out of the oven I might add a little honey or cane sugar to the recipe next time to improve on the taste to our liking. They are nice and fluffy on the inside. Overall I'm happy with them and glad to know how easy it is to make something that in the stores will cost me $6+, but I can make for less than a $1.50. I plan to make another batch of this tomorrow and just have them in the freezer ready for next time.

Hi Sue, have you ever started with less water for this flour? I start with 400g as per the recipe and found it too difficult to handle and launch. For the second dough ball I added extra flour and let it rest for an hour, much easier to launch. Thinking 325-350g is the right amount.
