I am not sure as I haven’t tested this recipe with liquid sugar. I would suggest experimenting but maybe only 2 tablespoons. Use your eye to ensure it becomes like cookie dough. Please let me know how you go!

Sorry I don’t bake with coconut sugar but to achieve a powdered sugar texture maybe grind it before baking. As mention in my other reply I haven’t had a chance to experiment with liquid sweeteners yet. Let me know how you get on.

No Spelt flour is not gluten-free. I can tolerate spelt flour more than wheat flour it is easier on the digestion.

I made this yesterday and for some reason it did not rise as much on the second rise but still tastes good! I’m just wondering what I could have done wrong. I used a Pullman pan and fresh milled whole grain spelt. Do you think that may have been the issue? I’m going to try it again soon.

Depending on your kitchen temperature you might need to leave it to rest a little longer. From my experience the second rise is never as big as the first. Some courser grains won’t get the spring like fluffy white bread. I would trust taste over form. Well done 👍🏻

Another thought add an extra teaspoon of yeast. Your homemade flour could be more grainy than my store bought brand. This will give it more lift!

Yes I have. My most popular and recent one. I have tried the soaking method and didn’t like the taste and results! I prefer using light buckwheat flour!! Happy baking 👌🏻

I love your recipes! They are relaxing and give great instructions and visuals. Saffron is hard to come by for me. Can I use the same amount of turmeric? When you say knead for 5 mins, does the 5 mins start that after all the ingredients have been incorporated and the dough has pulled away from the sides?

You could swap the coconut milk for some vegetable stock/broth and add a dash of milk, cream or yoghurt to get the creaminess.

Just made these and they came out beautifully! Have not tasted them yet but I am so happy because I have been wanting to make my own burger buns for a while now. Followed your directions and watched your video and my attempt was successful! Thank you for your video tutorials, they are really helpful! Finally tasted them and the only addition would be a sweetener of some sort. I see you use a tsp of sugar in your other 2 recipes for buns.

Made this yesterday and had my first two slices today for breakfast. It’s a different tasting bread and very dense but I really like seed varieties in it. Mine rose beautifully with a soft interior and crisp exterior. I think if I make this again, I’ll add some honey for a slightly sweeter bread. A good bread and will definitely work for grilled cheese sandwiches.

So happy for a bun recipe! A couple questions can I substitute a flax egg for the egg or do I leave it out? If i use 2 1/4 tsp of instant yeast will it be ok? Its easier to use the entire packet so I do not have to save the remainder.

Yes you can leave the egg out but add a tablespoon of oil. I haven’t used a flax egg in this recipe. The whole packet of yeast will be fine. I have done this before ä.
