Homemade Fermented Mustard is spicy and packs a bite thanks to a mix of yellow and brown mustard seeds, hot sauce brine, and a few other key ingredients. Hot sauce brine adds acidity and jump starts lacto-fermentation. This homemade fermented mustard recipe is the ideal companion to other fermented condiments (like our fermented ketchup). It's the salty, spicy water left over from making fermented hot sauce. If you don't have any, you can just use whey in this recipe. But we have tons of great hot sauce recipes if you want to try making some.

@@FarmSteady where I'm from theres a pepper that's very popular. We call them "long hots". I'd like to see a fermented hot sauce or salsa video made out of those.

The amounts confuse me. How do I work with 1-2 cups and 2-3 cups?

Sorry for the confusion. You want 4 cups of liquid total, so if you are using less brine use more water.

What is a hot sauce brine? Watered out hot-sauce?

If you've made fermented hot sauce (we have some good recipes for it if you want to make some), it's the leftover liquid that doesn't end up in your finished hot sauce. If you don't have any, it's totally fine, you can just use whey.

Will make this for sure. I always save brine from batches of pepper sauce can be added to a lot of recipes to add a little heat.

If you live near a larger city, the ethnic food stores (Especially Indian) have bulk spices like mustard seed. :-)

I am planning a fermented chocolate Habanero hot sauce, and want to add brown mustard seeds. I will ferment for 4 weeks. Will the seeds be OK in there for so long? Thanks for the video!

Great question! For this recipe, the heat level, consistency, and acidity changes the longer you ferment, so it totally depends on your preference!

We recommend storing in the fridge where it will keep refrigerated for at least 2 months!

after its done fermenting, all the liquid is added to the blend? + vinegar to taste?
