but I really like Nathan as a chef he is amazing at what he does and I like his simplicity when he presents his shows because he does food that can be done at home unlike Heston where u need a labrotary and a degree in food science lol

Na Greg Archipow hiya Greg na I'm not Heston ain't a genius ,I'm a professional chef myself but if I was going to do a cooking show it would make more sense for the audience to at least be able to try my recipes from there own home if that makes sense .

Heston is way more creative and thinks outside the box. He doesn't follow trends, he creates dishes to his appeal and uses them to create stories.

I was simply looking for an authentic batter recipe. And this is great. The tips on preparing the chips was great.

He forgot to mention, whenever you go to put something with a beer batter or wet batter you have to wave the fish or whatever you're putting in there around for a few seconds and this keeps it from sinking to the bottom and getting stuck. It's a very important step and cannot be skipped.

Looks great! I'm not so good cooking fish & chips; instead I buy products and put them together. Buy two McDonald's fish sandwiches plain (no sauce or cheese). Buy a small order of French fries. Throw away the rolls, put the fish on a plate with the fries, add some tartar sauce if you wish, along with a lemon wedge and some peas. Voila! Fish & Chips!

Pepper pet peeve! Hate when people put in so little pepper they might as well not even add it. I swear he put 4 grains of pepper in that flour for 4 pieces of fish and much left over not even coating anything. So less than one grain of pepper per piece of fish? FU hah

Why on earth do you skin the cod? Not only does the skin help to hold the fillets together, it tastes so damn good! I hate it when the skin is removed.

Your tartar is very different from the way we traditionally make ours. I think I would like yours better. A lot more depth and flavor. I must try this.

Quite honestly if I ordered fish and chips and I was served a ‘stack’ of about 6 chips then I’m afraid the chef would be wearing them.

I like the dish but yeast in the batter not a chance I'm sure it's a rising agent so the batter looks crispy but tradtional fish and chips doest have yeast in the batter

Traditionally is a word that is used awfully. Read any pre 20th century cookbook and you'll see how disgusting (by current tastes) their food. Why not stick to mead, fermented fish and shot phesant if you're being traditional. Traditionally people rode horse to work - don't use cars. Traditionally people married children under the age of 12, well I won't finish off that sentence but you get my drift. Point is, if it improves the product but still resembles it you can hardly decry it with shouts of traditionally.

Why the hell do people remove the skin from cod? It is sensationally tasty (actually the tastiest bit), it has more vitamins, minerals and nourishment than the flesh, and it holds the flesh together whilst the cod is being fried. Removing the skin is a sin and a crime.

Because that's not what Fish and Chips is. If you want cod with skin go to a fancy restaurant and order something on the menu that includes that. Skin has no place in traditional fish and chips.

Last time i ever made mayo from scratch was year's ago ... when i worked in Ibrox as for chips ,, 160 blanche then too cook at 180 . And tbh adding beer to a batter you actually won't taste it i know cos i make it every other day , and those peas aren't fresh ,, He's not going to buy x amount of pea pods to split open etc ..

It stops the chips from soaking in the oil as they cool leaving you with an oily mush inside. If done properly, deep fried food should be free of oil on the inside and only lightly oily on the outside.

Who gives a damn about what Americans think and do? No one in the BIG outside world does. Fish and chips (and mushy peas) was invented in the UK, where the people are nowhere near as morbidly obese as they are in the US of A.

I know you are a top chef but you had a perfect single portion of cod then ruined it by cutting in to three pieces thus turning yourself in to a belly cheater. If you owned a chippy here up north we would put your windows in. What you call a portion I'd feed to a cat.
