You on point with this bro. Fresh cut potatoes make the best "home fries", double cook as seen here and you MUST use the Kosher salt. It's a bigger more beefy crystal and is a game changer.

My favorite way for homemade fries is to boil them for 10 minutes in salty water, drain and cool.....then right after the fish is out... toss in the fries on high temp until crispy 3-5 minutes. A little bit of baking powder in the batter seems to keep it crunchy for hours.

Fantastic. Don't know about where you live, but it seems like everywhere we go, the fish and chips is bad. Usually breaded. Honestly, Long John Silver's is better than most of the places we go to. Interesting on your variation on frying Me a I Brit, you forgot to mention the surface starch removal during the washing phase. Then we boil the chips in water 90% done with 25% cheap vinegar to harden the fries. . Frying hates water. So dry you chips (fries) as best as possible on paper towel. Then 1HR in freezer or 12 in fridge. Now the big change we flash fry first! High temperature neutral oil. To crisp the skin. Then back into the fridge 12 HR or freezer 1. Then full fry the fries for perfect fries. Salt when hot outside pan. And enjoy. Triple cooked perfect fries. You can skip the freezer/fridge steps but chips will have less crispy skin. But potato mash like core will be there as long as you allow the fries to cool down to bare handledable temperature on each step. I use the freezer method if in hurry. Or cook 1 and 2 steps before. Then heavy fry from freezer a couple of days later. NB shallow frying on stage 2 and 3 absolutely does work. Just needs much more attention to keep flipping the fries over to prevent a burnt side of chips. NB fridge and freezer both act as dehumidifier sucking water out of fries

I just made this for dinner. I like the batter very much but I don't think I let it cook long enough exclamation my fish wasn't very flaky and I did use cod. I will try it again as I do like the batter for the fish
