It's a simple baguette recipe with only 4 ingredients.
Freshly baked, the skin is crispy and the inside is chewy. Even if it hardens over time, it can be eaten very deliciously with French toast or rusks.
The key point to baking perfectly is to preheat the oven to the maximum temperature. If there is enough steam inside, the scores will open wide.
[Ingredients] 12inchx2
250g all-purpose flour
5g salt
1.3g dry yeast
175g water
[Instructions]
1. Mix all dry ingredients in a bowl, then add water in 3 portions and mix well each time.
2. Cover with a plastic wrap and let the dough rest for 15 minutes. Every 15 minutes, do 3 sets of stretching and folding the dough.
3. Let the dough rise until doubled in size.
4. Turn the dough on a lightly floured work surface. Divide into 2 equal parts. Cover and let rest for 15 minutes.
5. Fold the dough in three to avoid crushing the air bubbles, and shape it into a 12-inch cylinder.
6. Place on a lightly floured couche. Cover and proof at room temperature for about 30 minutes.
7. Start preheating the oven to 260C/500F, with a baking tray positioned in the upper rack and a bread pan filled with hot water on the bottom rack.
8. Transfer the baguettes to a piece of parchment paper. Make 3 scores on each baguette with a bread lame or a sharp knife.
9. Reduce temperature to 245C/475F. Place the baguettes onto the baking tray and bake for 15 minutes.
10. Remove the water pan, rotate the baguettes, drop the temperature to 230C/450F and continue baking for another 15 minutes.
