That would be really tough, because it's not enough just to freeze the custard. In order for it freeze up into a giant ball of ice it needs to be kept in motion. That's why ice cream makers are so great. They keep the ice cream churning.

you shouldn't let the custard mixture get hotter than 175F and after you take it off the stove it immediately has to go in an ice bath because even if you turn off the heat the carry over cooking process is still happening... i think thats why his still had leftover product(other than the vanilla beans) in the sieve P.S. you should constantly be stirring so you don't burn the bottom of the mixture.

Hey! Thanks for that. So nice. Not sure about the weight of the egg yolks as we really don't do that here in the states. Our eggs are classified as medium, large and extra-large or jumbo. The ones I used in the video were from large eggs. Next time I crack an egg I weigh the yolk and let you know :) -Kirk

I always make 1 1/2 x original recipe cause I have my 2 adult kids who live with me... who ever is here while I make it always seems to have a spoon in hand🙄 (but,of course.. I'm the worse one 🤷♀️)

Hey ulise, I used a Madagascar vanilla bean, but any type should work just fine. There may be subtle differences in the taste of the end products, but nothing that's going to effect it too much. In terms of the amount, i'd probably add another vanilla bean, making it a total of two. Hope this helps. Kirk

Wow I've never seen a vanilla ice cream with both vanilla extract, and bean, this has to be great. How long do you wait until you temper the egg, as soon as your done cooking the cream, or wait 5min? I didn't see steam coming from the cream, so it didn't look that warm.

@SuperDottiie If you are looking to make an eggless version, simply omit them from the recipe. Mix the milk and sugar together really well until the sugar has dissolved, add the cream and the vanilla extract (and vanilla bean if you wish) and mix well again. Allow it to get cold in the fridge. Mix well one more time before adding it to an ice cream maker and you got it. Hope that helps. -Kirk

Great vid. I used to love ice cream from Rossi of southend in the 80s. It was served from a silver container and tasted fresh and wasnt heavy. Please advise whether its better to whisk your mixture or use a blender?

My great grandpa was in the ice cream business for years. He made ice cream for my great uncle and grandpa (mom's dad whom im closets to at the current moment) for their birthdays for many many years. Apparently he's the one who made, during his divison of the company he was working came up with the recipie for Tootie Fruity. He called it Truitt's Fruit. He didnt ever sell the recipie. I dont know its because he got into finacial trouble, or that its because of the company he worked for it it was the specific divison he worked for and it was already made, but if he really truly did make the Tootie Fruity flavor, imagine my family could've been billionairs. I trust my grandpa's words even if he has demensia now. He told me that before his demenisa worsened. But its not about the money to me. I want to be sucessful, and I wish to learn how to spread my works around the world the right way, wether or not I'm truly a billion or millionair or not. I do though, want to make ice cream the right way. One day, sharing people this story. Wheter or not you believe, wheter or not I truly believe it, is the question in itself. But he fact that my grandaddy made ice cream for my Uncle and my Grandpa is real. And that will never change. The fact my grandpa's momma was a nutritionist and taught my mom's mom - my grandma everything she knows about cooking and the fact I never got to meet her is a shame... Is real. But wether or not we really did invent Tootie Fruity, ah shucks, who knows. I dont need to know. I dont need to make a lawsuit over it? Who cares. But, still, take this as a grain of salt, will you. I just want people to enjoy food as a craft and treat it as an art form, to really think of it as something beautiful and make themsleves happy. No more will their be hungry people in the world... That'd be nice. Yet, we always know there will be. Do you believe my story?

+TrashyVerse I totally believe your story, because my family is pretty amazing as well. I think most people would find that their family had some remarkable history. And money is overrated. It causes more problems than it solves. You don't need money to be happy. You need to know who you are. Everything you really need in life you already have. All you need is you. You contain everything you need. Love, power, freedom, strength, wisdom, purpose, meaning, motivation, direction, security, etc. is all within you. All you really need is to share yourself. Just go out there and share, care, etc. That's all that life's about. Nothing more than that. Just make yourself useful. Bring a smile to as many faces as you can. Do this and the world will be your paradise.

You will need 8 large egg yolks 3/4 cup sugar 1 1/2 cups whole milk 2 1/2 cups heavy cream Pinch of fine sea salt 1 vanilla bean 2tsp vanilla extract

@gigahertz20 I'm sure the boiling had something to do with it, but grittiness usually means you didn't cool down the mixture enough before putting it into the ice cream maker. This makes the machine have to churn more. More churning equals gritty. Not sure why it wouldn't thicken for you on the stove though. I know it's a lot of liquid but it should have eventually gotten there without boiling. Next time, maybe make it in two separate batches.

Nice recipe, but a little warning: With this much fat (egg yolks and heavy cream) the ice cream turns out kinda buttery. It tastes great but once you swallow it, it feels like the inside of your mouth is coated with butter. If you (like me) are not a fan of that, I'd recommend using regular cream instead of heavy cream or using less heavy cream and more milk.

Why bother with making a homemade custard. What I do is this. I buy a readymade good quality vanilla custard in the supermarket. Put the custard in a bowl, add a bit more vanilla extract and a bit more sugar and some milk to turn the custard into a sauce and put it in the ice cream machine. And that's it! In one hour I have vanilla ice cream! Try it and please let me know if you like it!

Well, I don't know why raw eggs are no longer safe to eat, in the 80s body builders were drinking them all the time for morning protein. Anyway, what would happen is if you put the eggs all at once in the hot liquid you would get scrambled eggs yuck! No good. Tempering is an old cooking technique, you raise the temperature of the egg yolk gradually, so they don't curdle. You do this by adding the hot liquid VERY slowly. The yolk is adequately cooked, at least better than soft boiled eggs.

after everything is combined, put it into a recipient, cover it completely and leave it in the freezer for about 1h30. Remove from the freezer, put the mixture in a bowl, and using an electrical beater mix it until soft. Put again in the recipient. Return to the freezer. Repeat this procedure at least 4 times. The more you repeat this, the better your ice cream. You'll get a perfect creamy homemade ice cream, without an ice cream machine. You can store your ice cream for a month at the freezer.

You're doing that because it will make the water evaporate away from the milk. If it's okay for the ice cream to have ice in it, become ice itself or not be as creamy as ice cream from the stores then you can opt to lessen it a little. Warning though, it can cause the mixture to solidify. I hate it whenever that happens. >:(

Some people DO care because there could be a huge possibility that it affects the ice cream. I make homemade ice cream and know from experience that the freezer/ice cream maker/whatever you use has an effect on the ice cream. Prolonged exposure to cold temperatures can cause the ice cream to become rough.
