Love it. My family is from the Bahamas and we eat these all the time. Goes great with peas and rice, potato salad, Bahamian mac and cheese and some stew fish. Yes lawd!!!! Wonderful.

A St Lucian friend of mine does her "rice & peas" completely different from wot I'm used to... they cook da peas like as stew & serve it up on da side of/over plain rice with salad etc (banana/yam/plantain/dumplings)... very nice but I prefer Jamaica "rice & peas"!!

Thank you I figured out that what I did wrong was last time I got them too green. It was very hard to take them apart and it was like pears. So I tried them again I left them in a bag and thank you for the plastic tip but I love these things, and I look forward to perfecting this. Thank you

Gina I have seen them mashed as you mentioned. And you can boil the green ones and use as provisions. I made some the other day. Delicious. I also froze two plantains to use at a later date. Good video.

That is a stable in West Africa especially Nigeria. It is almost impossible for them not have it in their homes and they eat it with everything and done in more ways immaginable. And their parties are incomplete without plantain!

I Enjoy your cooking site. Just a hint that I’ve seen before: They partially fry the plantain until almost done, take it out, flatten with a fork on a paper towel, then put them back into the oil to continue to finish cooking. It’s like a homemade plantain chip, but still soft inside.🙂

I have loved plantain for years...............I prefer the green , seasoned with garlic salt and pepper...........mashed flat . you can buy mashers , from the hispanic stores....I never eat them , with another starch though......thank you , for the share..........

Hi Gina, love your vids, just one correction though, the ripe ones, which you are making now do not get smashed and refried. It's when the skin or peel is still green and they're a little tougher.
