This is a genius idea for the abundance of squash coming in daily from the garden. Amen to getting tired of eating it every way possible! Will be trying this VERY soon. Reminds me of making potato cakes with leftover mashed potatoes.

This is a good recipe. We enjoy them with cornmeal also. I just mix up my cornbread batter as usual and add onions and squash. Patty them up like you did and thems some good eatin'.

That sounds great too! My brother does that but makes hush puppies instead of Patties. Same thing though just a different way to eat them lol. I need to try it out. Thanks

Our recipe is about the same but we do a 1/4 cup of flour and 1/4 cup corn meal. I think the corn meal gives it a little more crunch. I also add some cayenne pepper.

Hey fellow Southerner! I've always gotten the excess water out of my Squash after gratting it, just added a pinch of salt, stir and pat it dry in my collander with a couple paper towels before adding it and other ingredients to the mixing bowl. Thanks for the recipe, we love our Southern cooking!

@@SouthernFoodJunkie Yeah, I just never did develop a taste for it. The only way my mom could get me to eat it growing up is if she sliced it real thin and fried it nice and crispy (translated dark brown to black). lol

I love it like that as well! I always tell my kids to keep trying things. Taste buds change over the years. I despised onions until a few years ago. Now I love them! So weird but, I always encourage ppl to keep trying things.
