Wow Mary,Thank you for this. I always buy 3 pineapples because pineapples are always in my dehydrator and give the scraps to the animals outside. Now I can make this vinegar. So very resourceful! I love vinegars!💝

I don't know who has 45min spare to learn this recipe which KZbin Shorts, Instagram reels, or TikTok can teach you in under 5min. Mary, please adapt and make shorter videos. There are 100 videos a day I want to watch, but will gain a lot more by watching 10x 4.5min videos of e.g. 10 different recipes, than waste 45 min. on just one.

Regarding mould (mold, U.S.) you'll find you can extract it from the surface of a ferment with a turkey baster. Just suck the mould/mold from the surface of the liquid. Thereafter, you can top up the ferment with water, if needed. And kudos to Mary, a great video as always, the real deal.

Hi Mary, I know this video recipe is a year old from now, but I wanted to share with you the joy I’m feeling today as I decanted the pineapple scrap vinegar I’ve made following your recipe a month ago. It’s been over 4 weeks now and I tested it using ph strips and it showed a 2.5 to 3.0 ph!!!! Yippee! I was thrilled bcoz it turned out nicely acidic and I hope to use it in salad dressings over the next year👍 and give you a huge “thank you” for your friendly sweet instructions for making it! Now I also followed your apple cider vinegar recipe recently and it’s in the process. Still have 3-4 weeks to go, but I’ll definitely share my feedback on that one too! You’re such a sweet encouraging teacher and friend that I’m so glad to have met you on YT, during the depressing pandemic years. God bless!

Hi. If your pineapple 🍍 is not completely yellow I will wait and not cut it yet. Pineapples are very good, and you will want to cut it right away. Excersice control and wait😆☺️ When pineapple ripens the juices are great and for it to ferment is easier. You can make juice, mermelada, vinegar 👌🏼👏🏼🍍🫶 Enjoy it Thank you Mary Nest!🙋🏻🙏🏼🙏🏼

I love some of the storage bottle ideas from the viewers. I love collecting pretty bottles. I buy some baby food just for the little pretty bottle it comes in. I use it to store relish and salad dressing. I fed my 8 year old the purreed fruit and he just laughed and laughed. And so did I. Your pantry can be really pretty with the right bottles. And this home-made project is fun, inspring and addictive! Thank you all for sharing your ideas. I read all the comments too and it's really helpful. We in Italy receive pineapple from America, the skin is so treated of chemicals to make a long journey and to avoid to import pests, that I wouldn’t dare to make the vinegar out of it, but thank you for the video, I will apply for my homegrown plums

In talking about collecting bottles I learned a hack to removing labels. Fill the bottle above the label with boiling water. Let sit 15 min or so. The hot water will melt the glue making it easier to peel the label off. Some glue may remain on the jar. Wash off. My grandmother taught me when pouring hot liquid into glass first place a metal utensil (table knife) into the glass. The metal keeps the glass from breaking because the intense heat.

I bought two pineapples at Costco to freeze dry and then this video popped up. That's kinda weird but I'm grateful!! Going to try it. I've got nasturtium/nettle vinegar going and banana, and banana/mint vinegars going compliments of Heidi at Rain Country. So fun!!

Thank for your recipe! I will definitely try it out! For the fermented cabbage: you should definitely try our fermenting style (traditional Ukrainian, fermenting has been a part of our traditional cuisine over centuries): a wide jar, 20 grams of salt for 1 kilo chopped cabbage (I normally use 2-3) and a carrot (one medium carrot for 2-3 kilo portion). Push it down and put a press on (e.g. a 2 gallon jar or something heavy). Leave in a cold place for 2-3 days. Then, just use your hands or spoons/force to mix and stir it (we need to let the bitterness out as well as help the cabbage to get a better favour). Let it stay for 1 more day. After it, the cabbage can be moved into jars and stored into a fridge.

So funny you mentioned the video where you rescue bottles and jars from your neighbors. I just yesterday mentioned to my son about you doing this! You inspired to do the same. Not necessarily from my neighbors because we do not have a recycling service nearby. I buy anything I can in glass jars or bottles instead of plastic, then I save everything. Hi Mary, I run all my scraps through a food processor and when I strain it gets poured into a large gallon sized draw string tea bag, set it in the colander and let it drip into the bowl. (Also keeps fruit flies out) When I get time later I just squeeze the bag dry. Scraps go straight into the mulch pile and the bag I rinse, machine wash inside out and reuse. I do however throw it in a webbed lime bag to wash so it doesn’t tear it up. I get the bags on Amazon and their use is incredible. Another note: I pin the drawstrings or they come out.

After watching your fruit scrap video I decided to make fruit scrap vinegar with my leftover watermelon, cantaloupe, honeydew melon scraps.. I also put in some of our home-grown grapes too. I hope that this fruit scrap vinegar comes out well. I have also made vinegar from our scrap apples from our orchard.. That came out Fantastic!! God Bless y'all

OMG! This video took me straight back to my childhood. My grandmother used to make pineapple rinds fermented with kefir grains (I came to know about kefir 40 years later here in USA) obviously they had another name: Bulgarian bacilii or bacilos bulgaros. She had a big clay pot for fermenting this and used just 3 ingredients: Pineapple rinds, piloncillo and kefir grains. Fermenting time was 3- 4 days and that was the family drink at the table. Sometimes she saved some in another pot to allow more fermentation and that was drank just for adults. It is absolutely delicious!! Also a very popular drink was fermented rice called "masato" full of probiotics. Good memories!

Don't you love the color and flavor of pineapple vinegar? It's so delicious and fragrant. Love the tip on washing flour sack towels with white vinegar. I always hated to use bleach on them, so mine tend to discolor. So nice that your viewers shared this great idea! 🌼🐦Love, Michele

Yes I use the organic coconut oil jars for water glasses. They are great! I use them for lots of things in the kitchen. They are very durable.

I am so thankful I found this video🙌🏼 as it gives me confirmation from a pro that I'm doing things correctly. The same thing happened to my pineapple vinegar AND to my strawberry vinegar. Removing the yeast and stirring up the fruit is exactly how to minimize that and prevent the vinegar from smelling "yeasty". Also, although rinsing the flour-sack cloth while straining the final product might seem like extra work, the coffee filters take soooo long, and some have come apart at the seems while I was straining; so, I fold my cloth into 4 and rinse the cloth after each straining. This has worked perfectly in making sure my final product is great vinegar; and, if we're gonna do it, we might as well do it right all the way around.

The pineapple core is the only place on earth where GOD gives us Bromelain. So I use the whole pineapple in my homemade yogurt! Blackberry or blueberry, banana, dark cherry, and my turmeric and ginger! This is my dinner!!! THANK YOU!!!

Hello Last night I finished watching your video. I had a pin apple that was so ripe that it was sweating it’s juice. I cut it. Saved half for snacks, preserve and made the vinegar mix. Wow! This morning it was bubbling! Removed the filter and stored it as you said. This pineapple is grown here in Puerto Rico 🇵🇷. Very sweet!!! Will keep you posted on my progress. God bless You! I do watch your fried Heidi. My Blessing has been finding you because you are very specific, keep in track, smiling while talking with sweet voice is like if my family member is teaching me. Ive learned you can top it off but be extra careful its not chlorinated water and don't go above the amount you began with. I have not tried it in practice yet.

I made fermented cabbage and I love it,but I haven't done vinegar and I will from now on. Also, you can wash your white flour suc with washing backing soda and salt and it will wash well and stay white as snow!

I recycle the GT’s kombucha bottles, glass pasta sauce containers, pickle bottles, Voss glass water bottles, of course my vinegar bottles. I like to use the vinegar bottles that have like a little glass handle like the vintage Italian balsamic vinegar bottles. If I get two of them I put oil in one and vinegar in another and I just leave them out on the table. I use a 48 ounce GTS kombucha bottles to store my spaghetti, rice and black beans and I just put them along the counter and they look beautiful. All you see is a large glass jar and what it’s filled with, they look stunning. If you don’t like the top you can just get a round sticker as a label and put it on top of the GT logo and you don’t have to worry about it.

Thought on sugar and yeast. I am a diabetic and over the years I've learned that when my blood sugar is high I can develp a yeast infection. Sugar FEEDS all kinds of yeast and bacteria. So use as little as possible.

The sugar that's put into your vinegar or other fermentation is eaten up in the process. But you really don't need sugar.

Yes indeed! With our old ones, one broke and the other didn't have auto shut-off so when we saw these at our local grocery store in the kitchen aisle with a 25% discount, we grabbed them. We're living the high life now! LOL!! Love, Mary

Having kept tropical fish, I used to "cycle" an empty (no fish, no plants) 10-20 gallon tank with an air stone for at least a week to ensure the clearance of chloramine from the water.

I LOVE ❤️ YOUR CHANNEL! I’ve learned so so much!! And, I too love the core of pineapples !! By the way!! I’ve successfully brewed my first batch of kombucha!! And I have 6 bottles working for a secondary ferment … also you should know I “reclaimed” store bought bottles 😉.. I am absolutely totally addicted to drinking kombucha!! It’s made me feel sooo much better !!

I have citrus rind vinegar (Heidi's) on the go right now and I just bought a pineapple!! So, pineapple vinegar coming up! Kraaken Rum comes in a beautiful glass bottle with little glass handles near the top. I have a few of them, 3 different sizes and now I know what I'm going to use them for!! Thankyou Mary!

Love all of your videos. I have had kahm yeast when making sauerkraut. I don't think sugar makes the kahm yeast come.

Mary, can you do a troubleshooting video on problems that people might have making their vinegars? You did cover some things in this video, but I'm specifically referring to whether the firmament needs to go longer.. I did your apple cider vinegar and when I tried it after 30 days it was bitter and fizzy. Should I have Let It Go longer or did I let it go too long? Thanks so much!

Hi Tammy, I understand completely. You might need yours to go longer to turn into vinegar. Do you have pH strips? If so, were you able to test the acidity level? Was it below 4.0? Did you keep your jar between 60°F-80°F? Did you keep your jar out of direct sunlight? Every type of ferment is persnickety! Sometimes they work, sometimes they don't - even when you have done everything correct! Sometimes the environment just doesn't want to cooperate. But I highly recommend testing it with pH strips. Thanks for sharing. We're doing well. Daniel's birthday was on Thursday. We celebrated on Wednesday since Mom and I were both off work that day. I got him a 4 person inflatable raft, a river tube, and a 3 pack of goggles. They live near a river, there is a river by our own property, and there is a lake near our property so we'll get plenty of use out of them. Mom got him play dough and copy paper. Daniel prefers to draw on loose papers. He doesn't like sketch pads.
