Do you let the milk sit out for a couple of days and collect cream for butter ? Or do you use fresh milk
Delicious! I just followed this recipe with half gallon of raw goat milk and one a half lemon. The curds were a little smaller but I ended up with a nice size cheese. I only added salt before shaping it and putting it in the fridge. Very delicious. Thanks for sharing the recipe.

Cheese recipes I've seen say not to use ultrapasterized. If you use cows milk it would probably come out as ricota cheese. Have no idea want would come out if you used heavycream but how bad could it be. (if you are going to make something new use a small amount at fiirst - just a suggestion)

Make the cheese and roll the garlic In the cheese in the cloth and then let it drain once well and serve. U can also compress it a little bit to firm it, and then soak it in salted olive oil.

Hey so about a week ago i bought goat cheese from walmart right? and well i got home i literally made everyone in my house try it.. well im sorry but literally all 6 of us were on the edge of throwing up.. BUT! I went back to walmart the next week to try other stuff and my gf made fun of me saying "Hey babe here is some more goat cheese, hahaaa " and i felt it like lol and i realized this was less squichy than the last one since the one i ate was really really squishy point is? Does goat cheese taste old and feel kind of dusty? mothy kind of? or could it have been expired???
@drkaplin987 жыл бұрын
It should be creamy when in a block and can be very sticky. crumbled will be a little dryer but it still should melt in your mouth and have a creamy consistency. Your walmart cheese sounds like it was expired, if possible get your cheese from local or reputable stores.

good fresh goat cheese are taste NICE but there is many different brand and ME TOTALLY GOAT DAIRY PRODUCT EATER can tell you it is big different from cheese to cheese depending of the brand and whether it is soft or hard. each should taste pleasant AT LEAST say about it. Yours must been expired....

Do you pour your lemon juice into the 180 degree milk? Or wait until it cools down ?
@Therapy72 Жыл бұрын
I tried this today, it did not work at all so I'm not sure where I went wrong. I pasturized the milk at 165 degrees, cooled it to about 80 degrees, then added the fresh lemon juice-no curds.
@margarethelmuth73375 ай бұрын
The milk has to be heated to 185 degrees F, no less than 180 and not over 190, and the lemon needs to be added while it is at that hot temperature, not when it’s cooled down, otherwise it won’t work, you said you only heated your milk to 165 degrees F and then you cooled it down to 80 degrees F before you added the lemon juice, I think your temperature was too low, That’s just my thoughts. I hope you’ve had successful cheese making since.

Yes, milk is milk as long it's of a desired animal. Not all goats make delicious milk. Also, some people do not like milk of a goat or cow that is free range as what it eats directly reflects the taste of its milk. Good for thought.

I make raw goat cheese. I do similar to above. I have mixed lemon juice with fresh milk (still warm), and let it set on the counter over night then strain. I've also made it by heating the milk to between 80 to 100 degrees F. then add in the lemon juice. turn off the heat let it set for 30 minutes. then strain it. You get a different flavor these ways.
