Yum! We use goya in my country too~ Its healthy and has a nice smell. Our recipe uses pork, garlic, kabocha, goya, and chinese long beans. We call it Pinakbet.

That guy at the end has the best job ever, think of all the squid snacks he gets to have all day. Looks like a great recipe, if I ever come across goya I'll definitely give this a shot.

This looks so good! My family recipe is more sour than salty, and instead of ajipon we use vinegar and kalamansi limes. I don't really like the ginger though, and will usually put in sliced dried chilli for a kick and top with lots of bonito flakes. I can't wait to try your version.

Just looking at you eating it makes me hungry. We have this dish where we just sauté it with garlic, onion, tomato and egg. It is a bit bitter and didn't like it when I was little. But an officemate loves to eat so I tried it once, I love it since then.

Ok okicheron- my mom used to make a stew with goya (bitter melon) and I really hated it! But you were so enthusiastic in this video I have to try cooking it your way! I have the ingredients on my counter and am making it tomorrow! Wish me luck :)

Well- I MADE IT! It's very spicy with the ginger! I couldn't taste much of anything besides the ginger. But I like ginger so I thought the dish was great! The squid provides good texture too. You are right- white rice went very well with it :)

Oh gosh, i feel like eating dried squid nowwwww and goya ughhh i'm so hungry! Is goya the same as bitter gourd? It looks smaller and thinner? Haha like how japanese cucumber are smaller and thinner than cucumbers

my mom loves to cook Goya. in Indonesia we called it "Pare" (not paer, but pa-and-re). because I can't use ajipon (afraid of not-halal ingredients) so we just using salt, a bit sugar and seasoning. another tips if you want to remove the bitter taste from goya, after you boil (add salt), then drain the water and press goya like ur recipe on "skin-tofu". it will completely remove the bitter :)

I grew up eating goya so I LOVE the bitter taste. Can I skip the pre-boiling of goya step to preserve the bitterness? Domo arigato!

Bitter melon! It's the first time I see that fruit!!! In Spain there are a couple of melon types but they are all round-ish and sweet, and you don't eat the cover, only the inside!!! ;D

You have weird pots and pans. :) Just kidding, but to the American eye your cookware often looks quite different to what we are used to seeing. I would enjoy a video in which you show the various shapes and materials and the reasoning behind them.

my mum said that ゴーヤー should taste bitter :) and since i cant consume alcohol, what can i use to substitute mirin?

I'm no expert, but since the mirin is being heated, the alcohol is evaporated out of the sauce. But if you still don't want to use it, you can try using rice wine vinegar. Though I'm not sure if the taste would be the same.

You can find non-alcoholic mirin from Asian stores too :-) I found some in my tiny local shop.

Dried Squid is precooked so you can eat it right out the package.

***** Does the goya still have some nutritional benefits after cooking? Can you use the goya broth in the recipe? My aunt actually eats goya and drinks goya juice to lower blood sugar levels, but she eats it raw. I just really hope this recipe still holds the nutrutional value while being delicious at the same time.

Ewwww :( I HATE goya! My mom used to make it when I was growing up and it used to be so bitter I used to cry when eating it! Lol!! O gosh just thinking about it brings back a bitter taste into my mouth xP Lol! I'm cringing as you're eating it lol!! My tongue is feeling like it's gonna be shrivelled up lol!!

Bitter melon is more of an acquired taste. If you look past the bitterness it has a great refreshing sense to it.
