Growing up in the States, I thought bitter melon was the grossest vegetable ever whenever my mother would make it. Now, as a middle aged man and mom’s not around anymore, I can’t get enough of its crispy, juicy, bitter taste. Thanks, Chef!

For the first time I saw this veggie at an Asian Farmer's market, so I had to try it. I cooked it exactly as instructed (adding a little bit of lime juice). Yes it's bitter but it''s refreshingly bitter. Thank You Chef! Next time, I will try it with green apple, that will take away the bitterness and makes it even more refreshing to eat. I will slo try to juice it as it's good for health. I am committed to try all vegetables Asians eat. I'm convinced their old history and culture knows better than the Western cultures. :) lol Thanks again for this video.

Hi Tom. I heard that bitter melon is good for people with diabetes. If I want to add the bitter melon to a smoothie to treat my diabetes, how much do I put in the smoothie? I don't want to use too much of it for fear of having hypoglycemia. After I chop it up, do I use 1/3 cup or 1/2 cup - how many cup do you recommend? Your response will be greatly appreciated. Thanks.

I tried making kimchi out of bitter melons. I found out that I couldn't eat very spicy foods unlike when I was in my '20's.. I put in pepper with a starter from a sourdough ( water, yeast and flour and sugar to ferment for at least 3 days) to make a vinegar. Then I blanched the bitter melon with a little sugar (to activate the sour dough)and some salt. Then I mixed in, garlic ginger and sliced shallots. Then the Korean dried powdered red chiles. It was good but I can only eat a little at a time.

The first bittermelon I had was REALLY bitter and I had no idea how to eat it without a chaser. That was about 12 years ago. Lately whenever I get bitter melons they've not been very bitter. They still taste awful but they aren't very bitter. If I'm going to go through all that awful I t least want the benefits. The last one I got is kinda fat and green but the other ones in the pile at the Korean store were already starting to deteriorate. Am I choosing wrong? Should I get the prickly Indian one?

Skip eating this and get bitter gourd/bitter melon capsules. Take morning and evening with meals. Unfortunately, the VERY bitter seeds are where most of the fruit's active ingredient, momordicin, hangs out. I find the actual fruit is far too bitter for me. I tried cooking with tomatoes, vinegar, citrus...nothing worked! Best of luck!

I've never heard it called 'ugly fruit' in the Caribbean. And 'ugli fruit' is the Jamaican tangelo, a member of the citrus family. No relation to bitter melon.

I don't understand why you are tryng 'to kill the bitterness'. Here in China, we love it BECAUSE it's bitter. And preparing it with Laoganma* is just strange - it will totally overpower the gourd. We normally cook bitter melon with beef. Or with pork and fermented black soy beans (豆豉 - dòu chǐ). Not jarred black bean sauce! *What type of Laoganma? Laoganma is just a brand name for several sauces. That's like saying add some Heinz! meaningless.
