I love stewed new potatoes served over white rice. Then to add another starch, prepare fried cornbread fritters! In the early 1950s, I remember coming home from school and finding pots of rice and new potatoes waiting for me. It was my favorite lunch.

Looks so yummy with fresh garden potatos. Would parsley or green onions for color ruin the stew? Easy and 😋 delicious.

If you’re using parsley, just sprinkle on at the end. Green onions could be thrown into the pot while the potatoes are cooking. I use chives because they are growing right next to my potatoes and they have a mild flavor. Add whatever suits your taste! I just love new potatoes!
