I agree with panteleon...when the coffee starts to rise, we call it "before it turns over" stop the boiling.If you do that you will expereance a really full cream.

We do the same coffee in Bulgaria, then it is called old coffee and in Turkey, then it is called, yes you got it. They make it the same way in Ethiopia, Morocco, etc.

A little greek secret for you. If you put coffee in cold water and then you heat it up the coffee gets a stronger taste. In the opposite,if you half boil the water and then ad coffee it's lighter.

I heat water only, until little bubbles form in the bottom, then add the coffee…like adding cocoa to warm water vs cold, it dissolves better.

Anxiously waiting for a turk "erruoting" and commenting that it is not greek but Turkish coffee😊😊😊😊. Actually it came from the arabs who took it from the ethiopians. No matter the name of it it is the healthiest of all coffees. 😊😊

I saw the videos and I'm really glad that you love Greece. You say it as we Greeks know it. For water e.g. you said it like it is. We don't drink water in the countryside. Apart from Athens, in very few areas it is potable. I have one objection, however, about how Greek coffee is made.😅 Try to take it off the heat as soon as the surface starts to rise, while the cream(καϊμάκι) is still thick. If you let it boil too much, you've ruined the cream. If it makes big bubbles, that is, you ruined it... you burned it. After putting it in the cup, a tip for the cream. You will have seen many people who blow the coffee. They obviously don't do it to cooling. They blow the cream to remove the coffee beans from the surface, so that when you drink it, it is more pleasant. definitely very Greeks, they will have a different opinion from ours, about how you make Greek coffee of course. sorry for my english level. Great approach for what normally people drink.. there are variations of course,based on the ratio of coffee/sugar...there are 7 ways ways of making it..1. sketos..like shown in the video...next is vareez gleekos, or 2. heavy on coffee and sugar, 3. heavy metrios..heavy on coffee but medium in sugar, or 4.heavy with little sugar..me oliyee, and then there is 5. light in coffee and sweet, 6. Light in coffee and medium in sugar.. or 7..light in coffee and light in sugar... enjoy!

It's always been a hit or miss with me making Greek coffee. It's not as easy to make as it looks in this video. Store bought, I prefer Bravo because I think it's lighter, but when I'm in Greece, I buy fresh ground from the neighborhood shop like you do. My ultimate goal is to be able to make it with no sugar

I was always getting distracted and the coffee would overflow and burn the hub. So on the advice of a greek friend I bought a machine which makes the coffee automatically and switches off when it's ready. It's from Beko I think it's the Beko 3000.

The narrow opening helps. But I think the important thing for a kaimaki is to stir continuously - or at least at the end - and low heat.

Greek coffee wasn't my favourite bur I loved Frappe. Is funny how after decades I still remember 2 songs (don't understand the lyrics) by Stratos Dionysiou - O Fantaros (The Soldier) and Ego O Xenos (The Foreigner) , my 2 favourite Greek songs. I had to do quite a bit of online research before I came across his name.

Amazon has single burner for 1lb coleman propane bottles. There's burners that also screw onto butane canisters. Your preference

The most important advice... do not stir it after putting the boiled coffee in the mug... let it rest. It is a common rookies mistake. Most people stir their coffee before drink it... a huge NO NO for that type of coffee.
