For pancakes, I melt butter in the pan after the cake is cooked so that I can set the cake down in an even layer of butter, then set the other side of the cake on a plate that has maple syrup on it. It makes for an even distribution of butter and syrup over the entire pancake.

As for the use of baking soda to remove coffee stains, I remember using it to clean thermos flasks back when I worked in commercial kitchens. We simply poured in baking soda and then boiling/hot water, let it sit for a short while and finally rinsed the thermos out with clean water. Did wonders (damn there was a lot of coffee gunk in some of those thermoses) for the taste of the coffee being kept in those thermos flasks afterwards.

I add up to one cup okara for every 2 cups of flour in a pancake recipe. My family loves them. My husband said they were the best pancakes ever. So, if you make your own soy milk, or tofu, the leftover okara can add an amazing lightness to pancakes. We all thought it would make them heavier, but you don't notice the okara, just a good pancake. You can add it to a pancake mix, too. Blessed be, everyone.

my favorite way to make scrambled eggs is what I call country scrambled - into the pan where I've cooked the bacon with all the brown bits still in there but I've poured off most of the fat, I just crack the two eggs, lil salt and pepper and immediately start stirring so you get little bits of white, little bits of yolk, cook and stir til just set and serve with hot sauce. yum!

First, whatever amount of butter your using, double it. Second, it's an art to getting the pan at JUST the right temperature. Not hot enough and they'll stick. Too hot and of course you'll burn your eggs. But it can be done. I cook them on All-Clad stainless. That's also part of it: a cheap pan will probably be a pain to try to get right.

All that said, I had to switch from my 10 inch skillet to my 12 inch skillet and to 10-12 eggs at a go since my kids just keep getting bigger. I am still trying to get it down as well as I had it with the 10 inch. They'd come out of the pan with only a little scattered sticking most of the time.

Ever since my Grandma left me her BH&G cookbook back in the early 90s, I have not used a boxed pancake mix. This pancake recipe is similar to my grandma’s, and my two daughters and my friends have asked me for the recipe, which I’m happy to share as the recipe is perfect. My bff/roommate will buy box mix and I’ll find it months later with mealy bugs in it. The scrambled eggs look like they’re raw, and my eggs have to be firm. Besides the pancake being set, another tip for knowing when to flip the pancakes is that a pancake has little air bubbles that will appear to be ready to pop. My bff/roommate will buy box mix and I’ll find it months later with mealy bugs in it. Where’s the link to buy the winning syrup dispenser?

Yes, and using a thin steel mixing bowl has the added advantage of it cooling down very rapidly when taken off the heat, unlike a pan with an aluminum core or base. Also, once you remove the bowl from atop the saucepan, you have simmering water that you can rapidly use for something else, like tea, coffee, blanching frozen peas, or whatever.
