I have always thought that making filled chocolates is a complex process. Then I realized that making my chocolate is very easy, much tastier than the version I purchased and I can control the quality of my own production.
In this video I will show you how to prepare stuffed pralines with 3 fillings:
1. Salted caramel filling
2. Nougat filling
3. Raspberry cream filling
Composition:
400 g dark chocolate (I recommend 55% cocoa), the amount is for 1 silicone form. In the video. I make 2 silicone molds, so I used 800 grams. Please note, we make chocolate shells so you have at least 500 grams left for the next recipe
Salted caramel filling:
80 g granulated sugar
100 g whipped cream
40 g butter
1 g of salt
Nougat filling:
80 g nougat
80 g dark chocolate
100 g whipped cream
Raspberry / strawberry filling:
200 g raspberries or strawberries (fresh or frozen)
100 g granulated sugar
1 tablespoon lemon juice
100 g white chocolate
