I like the detailed way you explain the recipes.The first recipe is like " brigadeiros". The other recipes is harder to do bc we do not have " butterscotch syrup ,or marshmellow cream.It is not something we use in my country, but i think some of the things you teach can be try with less processed ingredients like ( condensed milk,sugar,glucose,cream etc).

Boill sweetened condensed milk in the can. Keep the can covered with water, for 3 hours....when you open it, you will have the perfect caramel syrup, can be used in a pie, over ice cream or in fudge.

Boil sweetened condensed milk is called " Dulce de Leche" in my country. It is a milk jam used in several countries like Argentina,Uruguay,Chile.We use it in several desserts.

Came to learn how to make proper fudge, stayed for the hair. XD I look freaking terrible with short hair or I would 100% do something like that. Looks amazing on people who can pull it off. And yeah, the fudge was cool too. XD I'm probably going to stick to the microwave for now, but I'm definitely gonna try the rocky road one at some point when I'm brave enough to try this on a stove. :D

can you help me ive been trying to make vanilla fudge on the stove and its failed 3 times i cook it to 116oC and let it cool to 110oC and beat it with a wooden spoon then pour into a tin and it doesnt set over night

Hello, Ashlee Marie! I'm a new subscriber and really like many of your recipes. I like how you explain everything and make it look so easy. I'm used to weighing certain ingredients when baking. I want to try making the microwave fudge. (I don't have a candy thermometer yet.) Would the 3 cups of chocolate called for in the microwave fudge total 24 ounces? I use Trader Joe's chocolate chunks and chips. I also buy their big bar and cut up the chocolate. Thank you for your help. (On a side note, like your hair colors in your videos. I recently completed chemo, and my hair is growing out salt and pepper. I've thought of putting color in my hair, and I've gotten ideas from your videos. Thanks.)

Thank you so much! A cup of chocolate chips is usually about 6 oz so if you have a 24 oz bag you will have plenty of chocolate. You are amazing for getting through chemo, I wish you good luck on your recovery! I am so glad my crazy hair preferences gave you some ideas:)

Just found your channel and subscribed. I have a question about fudge that maybe you can answer. My Grandmother has a recipe for Martha Washington Fudge (which is a vanilla fudge.) It is a stove top recipe that requires taking the fudge to a soft ball stage. We have made this recipe several times and never have a consistent turnout. Sometimes it is perfect and other times it doesn't seem to set well. My Grandmother lived in Akron, OH and never had problems. I live in Greenville, SC. Do you think it is altitude or humidity that is causing the problem or what?

BOTH! humidity, altitude AND changes in the barometer (like a storm coming in) all effect candy making - when I was in AZ at sea level with no humidity and no weather changes my candy was PERFECT every single time - I thought I was a GENIUS - then I moved and started having issues again - grrrr. Anyway test your boiling point to see what the softball stage is for you and try that first - winter is a good time to make it since it's less humid - and try for a sunny day - with no storm coming it and see if it works out

Just went back and watched your Q&A videos and see you are in TN. You should totally check out the Hendersonville and Asheville NC area. Asheville is starting to get a pretty good food scene. There is the Biltmore Estate and Gardens, the Biltmore Vineyard, lots of B&Bs, great antique shopping. Hendersonville is a great small town. Love the downtown area. Still easy to park in downtown Hendersonville. This area has great antique shopping and some great apple orchards nearby. Hendersonville has an Apple Festival every year in the fall. While you are in the area you could drive to Chimney Rock, NC and Lake Lure, NC. Chimney Rock State Park has some great hiking. You can see Chimney Rock from Lake Lure. There is one main road running through Chimney Rock. Keep driving on that road and you enter Lake Lure. The lake is beautiful. The original Dirty Dancing was filmed at Lake Lure. Nell was filmed at Lake Lure. The Last of the Mohicans was filmed in Chimney Rock State Park. There is an old Kathleen Turner movie that was also filmed at Lake Lure. I recommend avoiding the are in the winter. The damn on the lake is lowered and they dredge the lake in the winter. Not pretty. Plus a lot of the restaurants are closed. But it would be a great day trip from Asheville to go to Chimney Rock and Lake Lure and another great day trip to go to Hendersonville.

Fudge isn't a super simple thing to make, candies like this can be hard. There are other kinds though, some have marshmallow creme or something along those lines. It just depends on which recipe you choose, I would suggest finding a totally new recipe that messing with mine though, it can get tricky:)

Our fudge recipe was handed down from my great grandmother, who came to the usa straight from Norway, she passed it to my grandmother, who passed it to my mother, who pased it to me....home made, scratch, sugar, milk and cocoa powder.....or peanut butter, or vanilla, even maple...all from the base mix....and my grandmothers would spin in their graves if we did not use the soft ball stage, and stored it in the fridge.

It is very hard to cook candy such as fudge without a candy thermometer, you can eyeball it and cook it until it has been boiling for a minute but it is not guaranteed to turn out every time. Thermometers are not very expensive and are a very nice tool to have for cooking so I would recommend just getting one. yes I refrigerate them - which is where they should be BUT it also dries them out - so they are safe to eat longer than they are "pretty" to eat. I'm going on a week and they are still totally fine - I'd avoid cutting them until you are ready to eat to keep them less dry if possible. they'd actualy last quite a long time if sealed properly

The problem with the butterbeer fudge is it has corn syrup in it. So of course if you follow the directions exactly you get taffy. Of course I trusted her and made it before I looked at what was in the smucker sauce. Please change the recipe or remove it. And before you ask I live at sea level and have experience in making both fudge and taffy from scratch.

I am not sure what went wrong but it is not like taffy at all, if you are worried about it you could get a different brand of butterscotch topping that doesn't have corn syrup but it should not effect the recipe. Corn syrup essentially keeps the sugar from becoming granulated, also helps with body and shine.
