How to make Homemade Japanese Udon noodles.
in this video, I am showing how to make Japanese homemade Udon noodle step by step.
it takes time. but you can enjoy making and taste your homemade Udon noodles.
To make Udon noodles, the key is using right flour.
I tried to make with Uk flour for 4 times and I was not happy.
almost all Uk flour content high protain, to make Udon, it's too much.
and also Uk flour content high ash, this mean the noodle will be darker colour.
for me Japanese, Udon noodle should be white.
finally I got good result with using French fine milled flour.
low content protein and ash.
I used T45 flour.
check the package of the flour when you use.
