Love salt and straw! My husband and I drive the eight hours, and wait in line for at least an hour every year for our anniversary :) this is the best flavor! I'm so excited to attempt making ice cream now!

@@sj460162 I use to make ice cream with a custard base (eggs) and I have completely switched to Salt & Straw's ice cream base. It's much easier, it's super rich and creamy PLUS I feel the custard base hindered the different flavors I tried making - instead of letting them be the star, they seemed to be an after-thought. I don't miss the custard base at all!

The base is incredible...im impressed! I just wondered if anyone has tried it with an egg yolk or two, and whether it would improve it further or not?

In another video he mentioned that he doesn't like using eggs in the base because it gets an eggy flavor. He uses xanthan gum instead of eggs as the stabilizer and thickener instead. So I guess if you like the flavor of egg in your ice cream, then you can add some. However, you might need to reduce the amount of xanthan gum so it doesn't get too thick.

@@xyramae69 he also uses the xanthan gum to help with the shelf life, without it it would only last around 3 days, with it it would last around 1 month

it's the stabilizer. you can leave it out but the texture will be different.

It's one option as a stabilizer (not bad either). Other recipes call for egg yolk...that requires more precision (and there's that eggy taste). Cornstarch is the best in my opinion.

My recipe. Get breyers vanilla ice cream. Top it off with caramel syrup from Knott's Berry farm. Dash of Himalayan salt.
