True to his word, Farmer Harry generously and openly shares his wine-making recipe with the world. Thanks for this great gift to those of us who knew nothing about making wine Mr. Harry! And special thanks to Mr. Lyndon Baptiste who promised viewers that he'd ask Farmer Harry about sharing his wine-making "secret". Mr. Bat's natural affinity for precision, and accurate measurements are also very much apparent in this video; he's a born engineer. One of the fruits used in Farmer Harry's wine recipe is pronounced: POMM-ER-RAC or POMME-AH-RACK. POMMERAC is a local French Patois word used by Trinidadians that is comprised of THREE FRENCH WORDS - POMME which means APPLE, AU which means "TO THE" or sometimes "FROM THE", and RAC which really came from the French Word MALAC which means MALAY. Thus, the fruit, POMMERAC, in Trinidadian French Patois came from the original French words "POMME AU MALAC" meaning - APPLE FROM MALAY or MALAY APPLE. The scientific name for POMMERAC is: Syzygium malaccense, and it is a species of flowering tree native to Malesia and Australia. It is one of the species cultivated since prehistoric times by the Austronesian peoples. And as we typically say at the end of all children's stories in Trinidad - Crick Crack, the monkey broke his back for a piece of POMMERAC "Inside Caura".

Mr Lyndon my brother myself and family is a religious viewer of your channel i have been living in Canada now for 35years but trini to my heart especially as i was born and grown in coura as a kid before i move to south Trinidad so my parents can care for my late grandparents but really injoyed the years that i lived in north Trinidad from Pasea Tunapuna , Eldorado abd lastly Coura "best"" and and i must thank you deeply from the bottom of my heart for brining back soo much of my roots i have not been back to the area Coura sence 1980. And now you have introduced two amazing young men Mr Bat and Mr Harry. I leave my wine to ferment for 9 days then strain it an leave it for 3 months an after that consume it an it gets very strong the longer you leave it .

Fruits have natural yeast that will affect the alcohol content in the finish wine. That yeast should be deactivated before wine is made with that fruit.
