Ikokore is a traditional Nigerian dish made from water yam. It's a popular delicacy among the liebu people in Nigeria. The dish is similar to pottage.
Here's a simple recipe for making Ikokore:
Ingredients:
water yam
smoked fish (catfish or mackerel)
Dried fish
Ground crayfish
Locust beans (optional)
onions
scotch bonnet or ground pepper
Method:
Peel the water yam and grate it into a bowl. You should have a thick, starchy paste. Add salt and seasoning to it, mix well and Set aside.
Wash and cut the fish into chunks.
Remove bones, if needed.
Heat the palm oil in a pot over medium heat.
Add the chopped onion and stir until it becomes soft and translucent.
Add the pepper and locust beans if using, fry for about 3mins
Add the dried fish, ponmo and meat (if using), seasoning and salt, Stir well
Add crayfish powder, add enough water or beef stock, and bring to a bowl
Once boiled, Scoop small portions of the grated water yam into the boiling mixture (as though you are dropping dumplings).
You can either stir gently or not stir at all
Cover the pot and allow the yam to cook for 10-15minutes. Yam balls will firm up as they cook
Once the yam has cooked, add the smoked fish into it. And allow to simmer for another 5-10mins
stir gently to combine the flavors. Be careful not to break the yam chunks too much.
