Ingredients:
Palm oil
Vegetables
Scotch bonnet
Red Bell peppers
Cayenne pepper
Onions
Locust beans
Crayfish powder
Smoked fish
Beef
Offals
Ponmo
Method:
Cook your protein, season with bouillon, salt, onions and set aside.
Wash your vegetables and blanch then set aside
Wash your peppers, roughly blend and set aside
In a pot, heat up palmoil for a few minutes, do not bleach
Add onions and locust beans into the hot oil and fry till fragrant.
Add the pepper mix and fry while stirring to avoid burning
Once little amount of oil is visible over the pepper, season with salt, crayfish powder, beef stock and bouillon & stir well.
Continue frying until oil is very visible above the pepper.
Add the proteins and continue frying till the water dries up completely.
Once your peppers well fried, add the vegetables into it, mix well and steam for a few seconds, then turn off the heat.
Serve with swallow of choice
