Yes. Jamaicans use so many things to make porridge. Banana, plantain, hominy corn, cormeal, peanut, arrowroot, pumpkin with carrot and the list goes on. We even blend some of which I have listed together and they are delicious. In a Jamaica we say "tun yuh hand an make fashion". You should try.

An all time favorite porridge aswell As green plantain. I prefer to grate it as when done that way there’s no need for any added flour. It’s perfectly thick and served with a little shaving of lime peel on top and condensed milk 😋

I have never seen nor hear people put flour in that porridge, but to eat it's own, if people want it thicker you can add oat or nuts, People use what they have or what they can afford...but in all simplicity you can even use more bananas to make it thicker...I have eaten both banana porridge and plantain porridge and NO FLOUR was added and it was so good and creamy...And the nice taste is because of what spices, vanilla, essence, you put into the porridge...I have eaten it with plant base milk, regular milk, and even condense milk...with sugar and without sugar...and that porridge was so DELICIOUS in every way. FOOD FAIRS in the Caribbean is good, I went to an agriculture food fair in the USVI years ago, and at that fair I bought 3 big rum size bottles of vanilla, mix essence, and almond essence from this Nevis booth, then I bought the spices like cinnamon barks, nutmeg and another small bottle of banana essence from this Grenada booth...I love fairs like this because a lot of Caribbean islands come together in one location to sell their products and art and best of all their food/desserts/drinks...they even have plants, and animals at the fair...I enjoy cultural things like that...CARIBBEAN CUISINE IS WORLD BEST, their ancestors taught them well...throughout all those struggles and not given up now you having a time of your life to see what real food taste like...And I'm glad you are enjoying it...because West Africans need to learn it's not only about PEPPERS and OIL and East Africa need to learn it not about BLAND food...But Season Your FOOD with LOVE to everyone can enjoy it...I remember when Trudy came to Ghana the pepper in the food was to much and when you went Kenya you felt their food was to bland, but now both of you are in JAMAICA one of the CARIBBEAN food favorite place, you both see and taste how DELICIOUS the food is...I love Caribbean food because they make the land and sea work for them.

I tried this delicious recipe for the first time using green plantains with satisfying outcome. I left out the sugar and substituted it with salt (Himalayan pink salt), and I sprinkled some crushed flaxseed and walnuts on top.

I agree, no flour is needed for the bananas. 3 or 4 bananas, is all you need to make the porridge , plus your spices, cinnamon, almond, vainilla. Pinch of salt, Sweeten to taste.

It doesn't NEED flour. Use multiple bananas to eliminate the need for that. Grating the banana or plantain is the original way as well as the coconut for the milk, the more modern and convenient way is the blender 😂😂. Just as everywhere else, everyone has their own way of doing things.

Definitely don’t need flour. Typically you can use more than one banana. Also you could could it with coconut milk. If you feel like you must add a flour like substance , arrow root is a better choice as white flour which has been bleached has no nutritional value compared to arrow root.

Wode, you forgot to add how its sweetened 🥥 Mommy is a good cook no doubt, but she doesn't explain things well. She's probably Camera shy.... The younger chef should have helped her explain.... He needed to refine it and add the sweetener /Milk options. Yes, you can add a weebit of all purpose flour, or Arrow root, or tapioca, or Cornstarch, any thickening agent to thicken.... It depends on what you like, what's available/affordable etc. Its still edible and delicious either way. For those saying white flour isn't healthy: Well if you're eating lots of it in white bread, pizza, etc then its best to use wholewheat but this only requires 2TBsp on average. Most people use white flour or corn starch to thicken their gravies... Even when the finest Restaurants that's what they use, and also in batters for deep fried battered foods

"Stronger body" in Jamaica means the starch content is higher. The green plantain has more starch because it is bigger in size to the green banana.
