Tostones [Fried Green Plantains] is a national treasure in the Caribbean! I serve mine with potent crushed garlic oil that gives these tostones a little bite! You'll find plantains all over the Caribbean and are either picked when they're green and full of starch or allowed to ripen creating the most delectable sweet plantains (platano maduros) which are my favorite! These twice-fried plantains are a little labor-intensive and time-consuming; however, the result is worth the effort! Plantains can be found in most supermarkets, but if it's hard to find, you can always find it in Hispanic grocery stores. Make it Sabroso! Tasty! Yummy! Savory!

I never had these until fairly recently. They are fantastic the plantain has a tangy enzyme that makes these very delicious. I sprinkle Citrus Adobo seasoning on them after with some garlic powder and they are little jewels.

Love tostones videos, this is 2nd x, I see someone put plantains in water, why? I usually put them to fry, right after I peel/cut them, love that sauce, will try it, TY for posting.

If you’re not frying right away, it’s good to put it in water so it doesn’t oxidize. Also, I find they come out crispier when they soak in water. Thanks for watching 🙏🏾

This is really easy! Thanks for sharing. However, I had no idea about the garlic oil. Will that work with plantains on the sweeter side? The first time I ate a plantain was when we were told how to cook them by my sister in law, who is Cruzan, when we visited St. Croix several years ago. They were excellent. Sadly, last weekend was the first time I'd seen a proper plantain in the grocery store. I had a guy from Jamaica test me to see if I knew how to cook them, and then he gave us some tips. It was like we were instant friends, talking and laughing in the store. If there was ever a time when I had proof that food can bring cultures together, that was it. Of course, the walls started to come down as soon as he learned by sis in law is Cruzan.

Yes the more black on the skin the sweeter it will be. For me…the best ones are 50/50 yellow and black. I like them sweet but still have texture

I LIKE THEM BOTH, THE YELLOW ONES, NOT SO SWEET...I PREFER TO ENJOY THEM RIGHT AFTER THEY TURN YELLOW IN COLOR (I BUY THEM GREEN, THEN ALLOW THEM TO RIPEN) NO PREFERENCE IN WHICH ONE, I ENJOY THEM BOTH!!!

Sounds like you didn’t fry them long enough before pressing them. I usually fry about 3-4 minutes per side. Hope this helps.

Why do you use green plantains? The other videos I have seen use yellow very ripened plaintains. Is there a reason for this?

Hi @LynnCarol thanks for watching! If you’re making Tostones it’s only made with the green plantains. The yellow Plantains are sweet and softer. Tostones are smashed green plantains that are twice-fried resulting in a very crispy product. Hope this helps!

@LynnCarol Placing the green plantains in salted water helps them from turning brown (they oxidize very quickly) and it also gives the Tostones a crispy texture.
