West Indian is it's more accurate as it includes Guyana and Belieze and we have similar food and culture and part of the common wealth . Caribbean is a woke term from the past 15 years by young West Indians living overseas .

Thats been technical as they are part of the common weslth and are West Indians, not Caribbean. Its obvious you dont have to be in the Caribbean sea to be West Indian as its now obvious to you with the countries mentioned above. The term Caribbean is only recent to label West Indians ( within last 20 years by some) and not all the islands in the Caribbean are West Indians, ie. Cuba, Puerto Rico, Dominica Republic the island Hispaniola which is shared with Hait are not West Indians. Furthermore, when there is a cricket match or football game, it's West Indies vs. whatever country.

I thought that is Jamaican favorite Rice & Red Bean, I am originally from Guyana, I used to live in Boulder, Colorado ONLY 2 Jamaican live there, we used to visit one home every Friday Night Rice & Red Beans, he will cook every Friday Night. Danver has few more Jamaican, In Guyana we cook the SAMETHING we call it "COOKUP RICE" we can put any beans inside the cook up rice.

When you're in Jamaica though, the knowledge is so general, even your neighbors would tell you if asked, but every one might add a certain twist to how they do it. Most jamaican people are naturally helpful unless they have a personal vendetta against you to not help you. Maybe It's because I'm from the rural parts and it's expected that you know how to cook at a young age. There are just stuffs especially as a girl that you're taught to do to support your future family aside from being educated, ambitious and strong. My mother would always say that your husband heart's rest in his belly, make sure he anticipate coming home to eat each evening, she was right. I must admit that i was inconsiderate to not take into account that every mother might be different, but it's still a disgrace if not for a valid reason.

As a Guyanese, I cook my rice and peas the same way I make cook- up -rice but without meat. As well as fresh thyme I also add fresh basil and tomatoes.

Rice and peas always makes me think of our Surinamese version. We use several kinds of peas/beans mixed with or without meats/fish to make versions of what we call Moksi Alesi. Served with fried plantain, cucumber or preserved limes and some kind of hot relish.

Definitely gonna try it your way. I grew up on sinking my peas first in cold water then add more cold water after water come to a boil to sink the the peas or soak it overnight. Yours came out really Shelly .

Thank you for making the peas on top of the stove. Everybody's been using a pressure cooker and my father always made pinto beans my mother makes plenty of beans and peas green peas always on top of the stove so took a long time for me to find that also if you don't have pimento berries can you use a little bit of allspice? I couldn't find them anywhere because it's so close to the holiday. Everything looks so good. Going to try & Jerk my turkey for the first time. Merry Christmas

Maggie Cheung. Think about the rice you are using a good basmati will give you a good outcome and you can always add water but you cannot take it away so if you think you have too much liquid take some out and keep adding it until the rice is cook a fluffy. You can also put foil over the top before putting the cover on but this is once the liquid as gone down. I am 80 and as been cooking this since I was 10.

Thank you, add less water the liquid not supposed to be too much above the rice otherwise it will be too soft and mushy

Yes Jody your rice reminds me of my moms watching her cook all my life I realized fresh kidney beans give the water that red color not the can ones and I don’t use them because the taste isn’t the same to me you’ve definitely gained a new subbie
