I am pleased that when you were tasting, you out the mixture in your hand to taste it and did not put the spoon to your mouth and then back to the mixture. I commend you on that. Sorry not seen sweet potato pudding made with flour. If anything mum would add a little cornmeal and a small amount of the grated coconut to give it body and a lighter texture. To each his own!!! Nevertheless yours looks really delicious and loving the syrup glaze at the end
