My mother passed over a year ago and I haven't been able to cook since. But this video today has really brought back fond memories of her making this . I think I 'm ready to start cooking again now. Thank you and may God bless you. Update: I just wanted you let you know that I'm finally cooking again! I am so happy! Thank you for your inspiring recipes. The banana bread is a tradition now and I'm lucky if I get a look in. A big thank you for all who sent me prayers and encouragement when you didn't have to. They really helped. God bless you all!

I did tweak the ingredients a bit and did everything by weight, but no complaints, more to share😊 Loved the authenticity and realness of this video. We have a similar pudding in Trinidad & Tobago, we call it PONE (Pronouced: poh ne). Its made with grated pumpkin, cassava and coconut. We add spices like ginger, cinnamon, sugar, vanilla essence and either coconut milk or water to combine. Its really delicious and looks very similar to this pudding. Caribbean people are excellent cooks.
