Not a bad mix chef... very well done, seeing that u had a basket to carry ur water. But fun & jokes aside, I think ur growth has shown voz ur later videos show more depth & experience. Still u could take a week in portland to get a real feel for the original jerk. Yuh zeeit. Gwaan duh di good work, none the less same way!

If I was to omit the oyster and soy sauce, ketchup too, wud it still be considered a jerk marinade? Cud i also leave out the cinnamon power too? I don't like the taste of cinnamon in food other than baked foods. Wen u cooked the pork, did u add anything to it other than your jerk marinade?

You'll need some type of sauce....you could use Maggi season sauce. And fresh ginger to replace the cinnamon. For the ketchup, fresh tomatoes maybe? Or just a tip of lemon/lime juice.

Best to try the fresh-ish ones. The dried ones probably too dried out. Never know till you try still. Especially if your in a warm country

The marinade look so good. So I tripled your recipe because I'm making 10lbs of wings. I have leftover marinade. Should I freeze it for another time because I'm not sure when I will use it again

I see that this comment has been here for a while I would send it again so he responds or someone else, but typically you do not freeze it unless you will not be using it in a waaaaay long time. Generally you would put it in a container and lay it on the bottom shelf or one of the shelves of your fridge where it stays there for months. That is how we do it in Jamaica but I do not have a timeline on that for you. But I would suggest that it can stay in your fridge say about two months... but hopefully you get the answer eit her from the chef or in the comments below.
