Throughout 'The Sopranos', food features very heavily, and amongst the myriad characters of the show one of the greatest fans of food is clearly the capo Vito Spatafore. On his little vacation to New England, Vito develops a taste for Johnny cakes - today we will recreate these cornmeal pancakes from 'The Sopranos'.

Recipe:
Take 1 cup cornmeal and add 1 ½ cups of boiling water, stirring the cornmeal as you do so. Add 1 1/2 tablespoons of butter and 1 teaspoon of salt to the mixture too, stirring well so it forms a nice semi-thick batter. Set to one side.
For the sausage seasoning you’ll need sage, thyme and basil. Chop all the herbs finely. Add the herbs to pre-ground sausage meat, along with a generous helping of pepper and salt. Mix well.
If you don't have a sausage stuffer, improvise with half of an old plastic water bottle. Take sausage casings, tie off one end, and attach the open end to the bottle - this will function as a funnel. Now stuff the sausage meat through the bottle funnel, filling the sausage casing. When you’re happy, twist each segment to create links.
Add the sausages to a pan with a little oil, and cook them till they’ve browned off a bit - then transfer to the oven to cook while you fry the Johnny Cakes. Heat a pan up to medium high heat and melt a good amount of butter in the pan. Now add a ladleful of batter to the hot pan, forming neat round pancakes. Watch the johnny cakes closely as they cook, ensuring that they do not burn. A few minutes each side should suffice. Cook until golden brown. Serve with butter and maple syrup.
