I just made this at my son's request. We didn't have the flavoring you used so I substituted 2 packets of unsweetened black cherry Koolaid. It turned out great. Koolaid already has citric acid, coloring and flavoring all in one. Thanks so much for the great recipe.😁 Edit: NO BAD IDEA when it cooled enough to cut it was super bitter. Sorry!
@wendyhanks77962 жыл бұрын
New edit: after a little research I read that if you put the citric acid in too quickly it will burn and be bitter. After several batches waiting until the temperature drops to about 275F, the koolaid does not get bitter. Yay! I use 2 packets of black cherry and it is very good.

do you mean you let it cool before you added the citric acid? I have everything laid out to make these but thought I would check comments as she isn't clear if 1/2 tsp is enough citric acid to actually taste like a jelly rancher. how much did you add?

Few things I experienced that weren't detailed in the video. After the mixture started to boil it took about 10 minutes to reach the "hard crack" temperature of 300 degrees. The temperature raises very slowly up until the very end. You're going to think it's not going to happen and then in the last 2 minutes it will go from 250 degrees to 300 degrees. This is because the water in the mixture eventually boils off completely leaving just the sugar. I wanted peach flavor and I used 1.5 drams (about 5ml) of the LorAnns flavoring just like she did. It wasn't enough. She also says in the video to use half a teaspoon of citric acid but after watching the video a few times it looks like she uses a lot more. But I stuck to her recipe the first try and it definitely wasn't enough. She uses a full teaspoon in the video and that's what ends up giving the most similar flavor to actual Jolly Ranchers. I ended up throwing the first batch away. When I remade it I used a full teaspoon of citric acid and 7.5ml (about 2 drams) of the flavor oil. I also used a candy mold since it was neater and cleaner than her method. I just poured the mixture right into the molds. I first tried a dropper and a baster but the mixture is too thick and sets up too quickly for either of those to be effective. Just take the pot you made the mixture in and pour it directly into the mold.

I used this recipe except i used: 1 1/2 teaspoon of citric acid also, i let the hot candy cool to 255 before adding the citric acid. it kept burning the citrus acid at higher temperatures, ruining batches. allowing it to cool to 255 had negatives as well though. that temperature is very close to no longer pourable. another point about mixing in the citric acid at the lower temperature is that mixing it causes bubbles which are less likely to go away being closer to hardening temperature. so you have to work really fast after mixing in the citric acid, but at the same time try to be gentle with the stirring as to not introduce too many bubbles.

Originally there was also a lemon flavor. No one will ever see this probably but I was in correct according to the Wikipedia on jolly ranchers "Jolly Rancher's original flavors were watermelon, apple, and blue raspberry. They soon introduced cherry, orange tangerine, lemon, grape, peach, black licorice, and sour apple. Eventually, blue raspberry replaced lemon." You can also poor the candy directly into a silicon mold it won't melt or anything silicon burns not melts at 2000 degrees f and you can Crack the jollys with the back of a butter knife or even the knife you used to shape the candy.

I made the hard candy today in raspberry flavour for the first time and they taste veeery good 🤤 i'm from germany and don't know jolly rancher and therefore i can't say if it tastes like them. I read that the citric acid gets bitter when you add it at too high temperature so don't add it immediately after you pull the sugar from the stove top. This may be the reason why some people said they burned it. I cut them into normal pieces and got about 100 pieces 😏 Tomorrow i will do other flavours 😛

@kndlass7 жыл бұрын
Crunch bars are easy enough. Find a bar/chocolate block type mold or you can use a tray and cut up later. its basically rice bubbles, (or rice crispies, depending on where you are) and a good quality baking chocolate, Nestlé is a good choice, but any will do. Melt your chocolate (about 220g/1 block) and add the cereal in (depending on how crunchy you want it, but between 1 and 2 cups is usually enough), and smooth into a mold or prepared tray. allow to chill until firm and cut or pop out of the mold. Tip: try using Coco pops and white chocolate for a change. This recipe is great with dairy or sugar free chocolate as well. 👍
