I make great scones but i can tell you a knife is the best for mixing your scones as it keeps them lighter and another hint is adding extra baking powder to your flour makes them lighter as well - i never handle my scones i just mix with knife and tip it out on bench with a little sprinkle of flour and i put flour on my hands and i pat it out and cut the scones although my scones are wetter then the ones you are making, as i like a wet dough for scones - never use a rolling pin, just pat it out with your hands and cut them out - I have been making scones since i was 12 years old and I am 71 years old and i make great scones that are light as a feather. Although i have been making sponges and cakes and other desserts since i was 12 years of age and i love cooking so much.

Hi Bridget, love your tips and this scone recipe. So what I do is mix all together, then out flatten with my hand till quite flatish.... less than 1 inch. Cut with a small cutter, dip in egg mixture or milk and bake them in my silicone cups. I get between 20 and 24. And boy do they rise .... they are such a hit with family and friends and they love the smaller size 😊😉💕thank u💕

These are the best scones. In New Zealand we use self rising flour as opposed to all purpose flour. We call Sprite or 7-Up lemonade. A must keep recipe. Thank you Bridget for all the tips. Every time I made them. it's always a success!!

I have loved the idea of making scones since we were in Europe. No one here makes them but I love Europeanthings and ways of cooking, I do not have a scone cutter, may buy one, but will use a cup. thank you for this recipe.....it has taken me 50 years to make a really good scone that doesn't taste raw still .....must say I leave a bit longer to bake more. Everyone loves them and.....I am just amazed at the lightness. The first time I made them ....I rolled them a bit too flat....so after watching this I realized where I went wrong .......so I actually don't even roll it out ....just pat down a bit then cut using a 58cm round cutter and get about 14 out :) ;)

I made these today for the second time to take for morning tea and they were much loved! The only thing I did differently was shape the dough and then cut each piece with a knife as I didn't have a cutter. I think I would use a knife in future too as there was no wastage :).

I personally would only use the heated tray when not using butter as they will collapse. But this recipe looks great and will work well with the heated tray as there is nothing to melt within.

I've made this recipe before, and they turned out OK but after watching all of your tips and tricks the batch I just made turned out fantastic - so light and fluffy and delicious thanks heaps for all the advice!! I think resting the dough made a big difference, and also the way they're cut out. I don't have a cutting ring so just used a cup and they still came out really great - it's amazing how much they rise from 2.5cm thick! Much love from Wellington :-)
