I just made this and it’s delicious!!!! I had a bit more of the vanilla layer vs the mango layer but still very tasty. I didn’t have vanilla paste and use 1 TBSP of vanilla extract and it was perfect ! Thank you !

Jennifer Lim Regarding your question about using banana for this recipe. Since my family is not big fan for banana extract so I never tried making panna cotta with it. But I'm sure it'll work just as fine. Just keep in mind that the water content is less in bananas compared to mangoes, so you might have to adjust the juice amount just a little. Hope that helps.

I highly recommend that you use vanilla bean paste. If it is because you don't have it on hand, you can actually find it in most specialty baking supply store or online here: goo.gl/oxi8hs Otherwise, you can substitute with vanilla extract. But please note that the flavor won't be as nice because vanilla bean paste is grind up whole vanilla bean. It's aroma is strong and delicious with the vanilla specks from inside the vanilla bean that vanilla extract can't provide. Hope that helps. :)
