Ingredients:
16 oz. Brown sauce or Demi-Glas
1 oz. Shallots, minced
3 oz. Red wine
Procedure:
1. Reduce wine and shallots until au sec (dry).
2. Add sauce and let simmer for 15 minutes.
3. Season with salt and pepper if needed.
