In Denmark we also have many traditions for making marzipan confectionary (Anton Berg is the most known brand for making commercial marzipan confectionary in Denmark) and cakes. The main difference is that we typically have more almond and less sugar, so usually 62-65% almonds and 35-38% confectioners sugar, by weight. I personally prefer the slightly less sweet marzipan but the great thing is that you can so easily adjust to your taste preference, consistency/texture, and even flavour if you like, adding almond essence, or replacing rose water with e.g. half lemon juice and water (you do not really taste the lemon but it somehow works really well against all the sweetness from the sugar). For Christmas we usually make the little pigs too, vegetables and fruits, but the chocolate coated (much like the Lübecker Marzipan Loaf but bite sized) are the favourites and can have e.g. brown nougat capsulated inside the marzipan, and some decorative chopped nuts, or sugared violet petal fragments on top of the chocolate coating. In Germany we have higher quality marzipan with more almond and less sugar, too. But I wanted Americans to like it and they drive on sugar :-)

I like to make kransekage: 1kg of ground almond, 500g of icing sugar. Eggwhite and almond essence to make dough. Shaped then baked. Marzipan is so versatile! 😀

@@MyGermanRecipes Personally, I will try making this with half of the sugar. I am not your typical American. laughing... I figured out to increase the liquid by 1 tbsp and the almond flour by one cup should do it. Odds are I cannot find rosewater. I'll first add a tsp of almond extract and a tsp extra water, in case. I normally use marzipan for the rare time I make bear claws. Bear claws without marzipan are not bear claws. I love your marzipan potato. That would be lovely for the holidays. Thank you!

Brings back memories! Made these with my Oma in the 60s-70s. After boiling almonds, squeeze one between thumb and finger and the almond shot out and skin stayed in your hand. Then a hand grinder that clamped to the kitchen counter to grind the almonds. Did we use liqueur or rum, maybe instead of or in addition to rose water, I though so, but I'm not sure anymore? Then roll the balls in cocoa and add some cuts to the top to look like an opened baked potato. I will have to find a hand grinder and make these with my grandkids. Thanks for video.

41 years ago my moms friend made our wedding cake using marzipan for the roses and like your said instead of fondant. ( she also made my first holy communion ( me age 7) using marzipan also. And here you can buy packages of marzipan potatoes and at our local German store we can get the pig! Good memories. I have made it but never with rose water. Thanks for sharing!

It's great to have a German store nearby. I am surprised they sell the marzipan pigs there, too. Try the rosewater if you can find it, it is a nice taste if you use not too much of it. I sometimes also use rosewater for rose macaroons.

We would always have marzipan at our house during the holidays. Usually in small fruit shapes or dipped in Dark Chocolate. It was a must on our treat table with all the cookies and other sugary delights. I can wait to make this with my kids. Thank you.

We've bought several times potato marzipan from Germany, but they contain alcohol instead od rose water. Here in Norway they use a lots of marzipan and cristmas og easter pigs are popular here too🙂Thank you for the recipe !🙂

Add a bit of red food color, and mix well into the dough. Then press into silicon molds, and pop right back out. Do NOT use any sort of grease, as the natural oil of the almonds will make the dough none stick.

@@rebeccacampbell585 I have tried both, and find that a few drops of liquid food color are easier to work into the mass. Powdered works too, but tends to clump up easily within the mass. But you make a valid point about not adding too much liquid.

Marzipan lends itself quite well for artistic and crafts persons to make and mold all sorts of edible decorations like cockroaches and whatever else you might think of ;-) . (You can color it & paint it too)

Lovely video, love your energy, and the simplicity of this recipe. I see you use a cutting board and tool to mix- can this be done in a food processor, or by hand its a different effect? Also, since the marzipan has water, how long can it last stored out of the fridge?

I don‘t think that it makes a difference whether you do it in the food processor or by hand. It might be more work though since you‘ll have to clean the food processor. Almond flour is quite oily! I would use an airtight container and store the marzipan in the fridge. So far, it has never gone bad in my house but it also never lasted too long since we really like marzipan 😁

The issue is that when the blended materials get too hot, the almonds released allot of oil, and the marzipan becomes very oily. So will attempt again and let it cool down from time to time

Marzipan wird aufgrund des vielen Zuckers eigentlich nicht schlecht, höchstens hart und trocken. Du solltest es auf jeden Fall luftdicht verpacken. Ideal ist Frischhaltefolie ganz eng drum herum und dann in einen luftdichten Behälter.

do you heat treat the flour before using it? I make raw edible cookie dough candies and I heat treat the flour (wheat, almond, rice) because it will be eaten raw. I purchase almond flour and keep it frozen until I use it to preserve its flavor. I remember the pink pigs and potatoes and colorful vegetable candy decorations my grandmother (born 1899 in Mainz) use to give us on Christmas eve. Thanks for the memories.

I haven't heat treated the almond flour but just recently stumbled upon the tip to do it. 30 minutes at 80 - 95°C (176 - 203°F) and it's supposed to also increase taste and workability. So, next time I will try this.

I had never heard of tartiflette and had to look it up. It seems to be French. I'm afraid I'm no help with this recipe but there seem to be recipes in English on the internet for it. I'm curious: In what movie did you see it? If it was German, it was probably from a region very close to France.

Why rose water and not simply an egg white and a dash of vanilla extract?

Because the rosewater adds a certain taste that you will find in German marzipan from the town "Lübeck". Besides: I wouldn't want a raw egg white in my marzipan. Vanilla is also not a traditional German marzipan ingredient. Every region in Europe has a bit of a different recipe for this.

Goodness, this is a very, very, simplified version of marzipan. Real German marzipan is not as sweet as this version. Also, there are some very important ingredients missing in this version, if you want it to be very authentic. Note that it is much easier to make it in food processor. But this version work too. Oh, and please know that you need to have a very powerful grinder / or food processor to finely grind real almonds. Even if they are blanched. I have to say that using almond flower really is much easier to use, and really does not affect the flavor. This version is a great first attempt at marzipan.
