I too am of German heritage. I just found your channel! Looking forward to your videos. I was taught to make a dressing from the bacon drippings after frying. I was taught to add apple cider vinegar a bit of flour to thicken. This would go in the warm potatoes with the bacon crumbled in. I am going to try your version as well.

My mom is from Ludwigshafen, my Oma made her potatoes salad with raw onion, bacon, vinegar, oil, salt and pepper very simple. To this day that is how I make it.

Thank you for this one. I grew up eating this as a child and my mother and Aunt often made it for us. When i serve it at gatherings i often get many compliments on it and they all want the recipe and where it came from. I also am part German. My two grandchildren have German Citizenship ...Their mother is German....

This is the version of potato salad our family makes. It is an in your head recipe. I learned from mom. She learned from her mom. I am unsure how far back it goes. It is made in huge batches.

Lovely video! Us Midwestern Germans make a similar style, but we don't cook the onion, use parsley instead of chives and add lots of sugar....to taste of course. Some like it hot and I like it cold. Red potatoes are perfect but I've had success with Yukon Golds too🍻

I think it depends on the Midwestern Germans. I'm Midwestern German American (2nd generation on my mom's side and 3rd on my dad's side), and my dad's German farming family in Ohio had sugar in theirs with parsley and chives, but my mom's German family in Detroit's was very much like this video (no sugar, and with the onions and chives). I wonder if it was a regional Germany thing, or a regional Midwest thing?

@@shell2250 Germans will add a pinch of sugar but barely noticeable. Add sugar to things is purely an American thing. Bread has no sugar, unless you intend it to be a sweet bread and yet all the breads in America have 2 to 4 or 6 grams of sugar!!!

My family's German potato salad is very similar! The only difference is that my opa used apple cider vinegar instead of wine vinegar, and he used water instead of vegetable broth. I wonder if that was him just being frugal, though. lol. I love this style of German potato salad warm. Funny fact: this is the only type of potato salad I knew growing up, and I was confused when I was a kid and went to a friends house and they had a mayo based potato salad. It was then when I realized most American's don't know of this style of potato salad. Funny fact number 2: The first time I tried to make this myself for a work pot luck, I also didn't know about the different type of potatoes. I ended up with a German style mashed potatoes instead. lol. I did learn, and the next time I brought it into the office, people loved it. The type of potato really matters! lol. Love your videos.

This is an outstanding very clear explaintive well done video. Explaining the process from start to finish from a real German lady who knows how to do it! I am going to experiment and try to use Sweet Potatoes in a batch. From what I recall from my times in Italy, that the Italian of Potato salad version is similar to the Southern German version. With Vinigar and Oil. In my opinion Vinigar&Oil is the only way I like and want it! Dont like mayonnaise versions, or tollarate milk or sour cream. It's amazing how a vegetable from Peru (Potatoes) spred all around the world and now is a stable in most cultures cuisine. Ausgezeitnet ,Keep up the good insightful work!

@@MyGermanRecipes you need to boil 1kg of potatoes (festkochende Kartoffeln), cook them in their skins …Schale in german • Then peel, wait until they cool down • potatoes into thin slices • Dissolve 1 cube of vegetable broth in ¾ liters of water • Add 1 onion very finely chopped • Good splash of white wine vinegar, salt, pepper, Maggi, rapeseed oil, a little mustard, add some sugar (It should taste salty and sour) • Then pour the warm broth over the salad. The salad should still be some liquid, the potatos suck the sauce on (saugen die Sauce auf) Wait, taste it, . Spice it up to taste.

I very much enjoy watching your videos. Today I'm looking for a recipe to the potato salad my mother made. It was very simple, however, I don't seem to get the dressing to taste just like her's. My mother's German Potato Salad was made with just potatoes and onions, and served cold. The dressing was vinegar, oil, water, salt, pepper and sugar. Are you familiar with this salad, and would you have a recipe for the dressing? Thank you.

I think you just pretty much described the recipe you are looking at here. Just adjust it the way you memorize it from your mom and serve it cold instead of warm.

Are there any recipes similar to this one that have a very slight sweetness as well? Years ago, I had a potato salad at a German restaurant, but it had a hint of sweetness. It was at the umami level.

Just one Point - Berlin Style is NOT with mayo, its a vinaigrette base - the mayo version is the northern germany version

No BACON in the Munich potato salad, no VINAIGRETTE*.. .just oil, vinegar, onion, broth, salt, pepper, chives. Source/Literatur: "Das Kochbuch aus München und Oberbayern". * Vinaigrette, you will agree, is not german/bavarian terminology. In France vinaigrette is made of MUSTARD, vinegar and oil.

@@MyGermanRecipes Sie laden geradezu dazu ein. Es gibt etwas, und das heißt Tradition. Nennen Sie Ihren Salat "Salat meiner Verwandten aus Hinterpfuiteifi", jedoch nicht Münchner Kartoffelsalat, das stimmt einfach nicht mit der überlieferten Tradition überein. Das ist amerikanischer Krampf, überall Bacon dabei haben zu wollen.

Those are green onions. Not chives.

I can assure you they are chives, I planted them. Green onions are larger and have a different scent.
