Kenyan Masala Chips / fries are cooked in a spicy sauce and finished off with fresh lemon juice for that tangy flavor. It is one of those dishes that are so uniquely Kenyan and is a childhood favorite of many people who grew up in Kenya.
List of Ingredients:
1 medium sized onions - finely chopped
Bunch of Dhania (coriander) leaves
1 table spoon curry powder
1 tablespoon vegetable oil
2 garlic cloves, 1 inch ginger root, 2 green chillies crushed to a paste
2 beef cubes (bouillons)
3 tomatoes finely chopped
6 large potatoes - cut into thin fries
Enough oil for deep frying
1 teaspoon garam masala (Optional)
Fresh Juice of 1/4 lemon

Since I am in America I tried various cooking methods with this recipe. I baked the potatoes in the oven (healthy reasons) until crispy and used our version of sweet potatoes (with the orange flesh). It was delicious. Used your recipe as the base and changed it slightly!

Habari jioni. I cooked the masala chips this evening in London and I am lost for words. The Masala chips was easy to cook and the taste was absolutely stunning. I ate the Masala chips with tandoori chicken and Kachumbari. My friend tried some of my chips and they were jealous. I'm definitely going to cook the Masala chips agains because I know all the women will come to me. Astante sana.

+lucy kavere Thank you. And yes, those are the sufurias in most average homes. That is not to say that there are no shiny sufurias it's just that most guys choose to dedicate one to all the wear and tear especially if heavy work is involved like, for example, cooking ugali. One sufuria is set aside to take all the brunt force of the mwiko and acquire all the dents.

Jikonimagic can that oil be reused? Let's say if you use it to make some fries for lunch and you are not sure when to make fries next..How can you reuse the oil

Absolutely yes. I always re-use my oil. The only rule I make sure to follow is this; If I fry "clean foods" like mandazi and sausages I make sure that the next time I will use it for similar foods. Like let's say fries. But if I use it for breaded foods like kebabs, chicken, etc, I sieve it once it cools down and then keep it separately. If I fry foods with very strong smells like fish then of course that oil can only be used for fish and not mandazi.

Hi Eve, no it's not a must that you use ginger and garlic. Just make your own spice and herbs mix. My recipes offer a glimpse of how I make my own food, you can always tweak them to suit your personal taste.

Yes, there's a lot of Indian influence especially along the Coastal area. But in the other parts of Kenya it's minimal to non existent, the foods there are very different.

Your top notch absolutely awesome. All your video recipes are great. Keep up the great work. My kids just loved this dish. I would love to see recipes of chicken livers,chicken shingos, whole fish, rabbit and duck also dry fry for mbuzi. Again asante sana for your great recipes.

+Carol Lucas Hi, you don't necessarily need the curry powder for this dish to work. You can use any blend of spices that you have at hand. Chips masala is a dish that can be personalized whichever way you like.

Peter Mutie Thank you for watching my videos. When it comes to lighting, daylight is your best friend. Try and utilize as much natural light as possible. Set up your work station so that it takes complete advantage of it and work out the best time to shoot your videos. I found that the best time to shoot my videos is during morning hours between 9-11am because the sunlight is streaming directly into my kitchen. To tell you the truth Laila, I don't know. I cook my food by sight, smell and texture. It's instinctive, I have never had to cook according to degrees apart from when baking. I have learnt to know when my food is just right through practice.

This is a good choice because it's one of those Kenyan dishes that isn't very common outside of our borders. However, I would recommend something more traditional. Like this porridge, kzbin.info/www/bejne/noCqY5yoqJqjjbM It's a very ancient recipe which I have adapted to fit into a modern kitchen. Traditionally it's made using huge pestle and mortars made from tree logs, then fermented in gourds.
