I'm in the military and I'm about 4500 miles away from my family and still have not met a mother Cambodian. I have been away for about 3 years now and have not had traditional Cambodian food in a very very long time. Good word man. My favorite part is heating your mom explain what your doing as well lol. It makes me miss my mom.

I believe its all because of the wok. When using a high temp wok you can create this char/burnt taste and smell. It can also be sesame oil that they add at the end that gives it a nice smell.

I came upon this video clip cuz of the meat tenderizer. I'm planning to cook for my nephews. I was all serious watching even to the point of having pen and paper taking notes. I started cracking up laughing when it got to the point of you sitting on the table to eat. There was a looooooong moment of silence while you munch away. It got all quiet. LOL hmmm....enjoying the food.

Cambodian food would probably be closer related to thai and laos. The thai version of this recipe only uses chinese brocolli. As you can see, the Cambodian version has that and other vegetables as well. I prefer the Cambodian version if you were to ask me. Those added vegetables are a great compliment to the rest of the dish.
