Hi senorita I want to say that out of about 325 people that I've met throughout the years YOU are the ONLY one I know that makes rice the way my mom used to make it.it is the exact same way you do it. The recipe is 93 years old and just like you said EVERYBODY always wants another bowl cuz it goes Fast with some Frijoles on the side for Breakfast,Lunch and Dinner with Tortillas.my GREAT grandma taught my mom and I learned it from her. I'm her oldest son 52years old and WILL NOT ever change the way we make it. Its has to have CUMIN or it won't have the flavor EVERYONE likes. Yup 20 minutes is correct. Do Not Touch the Lid to peek no matter what or you will mess it up.i like our rice Moist and not to dry just like you. In from Phoenix Arizona and everybody down there makes it like that at least us the LEON family has for 93 years and counting. Pure Compliments.

Muchas Gracias Señor!! I have often had many people who love my rice , question the ratio of water to rice! I have had to explain over and over that I like my rice to be moist not dry and if this is what they like about it too, this is how they need to make it! When they finally do make it, they are so pleased and say this is the first time that they have been successful with making rice! This is the way my mother taught me and it has always been very well received at any pot like I take it to! I've had some people tell me that they never liked rice because it just seems so dry and flavorless but that if they could have rice like this all the time they would be a convert! 😁 Thank you for your words of encouragement and complimentary kind words. It does not have to be complicated to be delicious!! It is a very easy and straightforward recipe and guaranteed to be a crowd pleaser. Even the babies love it because it has the right amount of moistness to mix in with frijoles! Thank you for your input!

Deb, today I made your delicious rice, I followed your recipe to a "T" and oh my gosh, it smelled just like my dear Mom's Mexican rice. I echo everything everyone has posted. We all gobbled it, yes gobbled it down. My younger sister watched me from a distance and now it will be a family recipe from Deb. Thank you so much. My Mom passed in 2007, would not give measurements because she had to get the meal on the table but now we have them. I have some left over chicken so I'll be incorporating with the rice recipe to make Arroz Con Pollo. By the way, I'm 73 years of age and Sissy is 55 so it's never too old to learn, Gracias Deb!!!

thank you for your recipe, I used it to make a homemade "mexican lasagna" is what i call it, after cooking i got out a casserole dish put a layer of rice in the bottom, top it with cheese add a layer of corn tortillas, then a layer of rice, and a layer of shredded chicken and black beans and green chilies. then another layer of tortillas, another layer of the shredded chicken mixture, top with cheese and bake till its incorporated. with the wetness of your rice it moistened up the tortillas fantastically so a spatula could cut right through them. It was FANTASTIC.

Have you made a recipe book for your nieces? Pass down the history! I was so blessed that my Tias catered my wedding meal! My Dad was the youngest of10 ( boys, 5 girls)! All of them had a knack with cooking the authentic Mexican food they grew up with. I am blessed that I still have 1 Tia and 1 Tio left, both in their early 80's and still very active. is almost here - may your comng year be filled with abundant blessings and, of course, good food!.🙏😋

Rest the rice for five minutes, covered with the lid. The pan will let go of the 'sticking' rice.

That is exactly how I make mine! If I do not have tomato sauce I use "tomato boullion" to give it it's color and taste. Perfect rice. Puffy, flavorful and moist ! (20 min exactly) mom's recipe👍

@@WFCA I personally will not use bouillon powder with the chicken stock, only because the bouillon may make it too salty. I have to watch my sodium intake. It’s all about personal preference though. Some people may use both.😊

I love making this rice...is a family favorite with beans...n Puffy Tacos. I use my instantpot, saute onions, garlic, then rice....then cook 10 mins after adding liquids, n tomatoes....LOTS of Cummin Seed and powder....I add floral shaped carrot slices, cilantro...but I like more tomato paste as I love the tomatoey flavor.

Made you recipe modified yesterday..outstanding Best I ever made...the extra water was great. My modifications were fine chopped onion and fine chopped garlic at the end of browning process. Also the chicken bouillon perfect

That is how my Grandma my Mom and I have been making perfect Spanish rice for year’s and year’s. I make it for lots of parties at request, but my Family loves it. We use some different spices but cook it the same.

Awe…this brings me great memories. Two more tips: 1) I center the pan right before I lower the flame. I center it based on the bubbling ring. 2) Deb-the rings on your electric stove top can be removed with BAR KEEPER’S FRIEND/multipurpose cooktop cleaner. Grey & blue bottle. It’s a liquid and I just wipe it over my cool stove top and let it sit. I wipe it off with a damp terrycloth. If it’s a bit stubborn I use some Dawn Power Wash first. I hope this helps. I love my electric cooktop. Thank you for your great recipie 🥘💕

Thank you for the tips on the stove but I just remodeled my kitchen not too long ago but I am still waiting for my Viking range 🥰 I'm having issues with Best Buy not having the one I need but it should be coming within the next few months. I could have used those tips though 😅

I know! It got back ordered a couple times so I have been patiently waiting for a year. That's why you'll see me cooking on my little electric burner in a few videos and i finally got tired of that so I bought a stove on FB marketplace to hold me over til my stove comes. 😁

Seen your recipe for Mexican Rice on Collard Valley Cooks tonight. I lived in Venezuela for several years and that's where I learned to cook my rice in that way. Still make it that way.

Me too! I watched Tammy make it on Collard Valley Cooks last night and had to watch it because I took my granddaughter to a Mexican restaurant this week and she loves the Mexican rice now. Thank goodness I have all the ingredients on hand so that’s what I’m making for her thanks to Tammy and Deb! I’m confident she’s gonna love it!

Thank you for this wonderful video! The first time I attempted Mexican rice like this I cooked it exactly this same way (using chicken stock instead of water + bullion)--but in a cast iron skillet--it turned out great!

It's the toasting in oil before steaming that makes the difference. I learned to make rice from a Chinese tailor that worked as a cook in a bar in Spain. First cook onions in oil and just before removing the onion drop in crushed garlic for two minutes. After removing the garlic and onion dump in the rice and toast until translucent then add chicken stock. Now days I use a pressure cooker to cook the rice after toasting and it always comes out great. I can use it for any savory dish from arroze con pollo to shrimp fried rice.

It is amazing how many different ways you can prepare and tweak a dish , And it's equally delicious. Frying the rice definitely makes a big difference.

My Mother would do the 1 to 2 measurements, we'd brown the rice, use salt pepper, garlic and cumin. We'd make it a meal by put in mixed veggies, bell peppers and chicken (chicken wings) have the best flavor. You have to start cooking the chicken first in one skillet and brown the rice in a smaller skillet. We're from Texas and that's how we did it.

Hey Maria I love your videos because I love Mexican food. I also love your kitchen. I have all my appliances on my counter also. I have had cancer twice in three yrs. Lots of chemo and radiation so very weak and cannot get things high and low from cabinets so on the counter they are. Will make the rice as it also is my favorite.Thanks
