I made this chocolate many times with different variants (add a couple teaspoons of instant coffee or threw in some nuts). But what I want to share with you is what I do to make it remain solid at room temperature. I use a metal bowl over another pot with some simmering water to melt the cacao butter. After melting I add the solid parts in the same bowl, and keep mixing for almost 5-10 minutes. I use a spatula to lightly mix the warm chocolate. I try to spread it inside the bowl. After that I pour it in the forms. What I doing may not be the classic tampering but it works. I left the chocolate on the table for days and it stays hard, even harder than the store bought chocolate. BTW, theoretically you ca also add some good store bought chocolate (just a little bit, like a small square). It also works for "tampering" bringing in seeds for the good crystals.

I subbed out his powdered sugar for confectioners Swerve sugar substitute but I used a little less ratio wise because I didn't want it overly sweet and I did not want to detect the sugar substitute. I upped the milk powder a little bit and I used approximately half non-fat and full fat dry milk powder. Depending upon my mood I will lay raisins, desiccated coconut flakes Himalayan salt, puffed quinoa, chopped walnuts, almonds, etc in the tray before I pour the warm chocolate. This has created some of the most insanely delicious sugar-free chocolate I've ever eaten. Thank you Todd 😊

Erika Newton I'm going to take an educated guess and say it's not tempered. When chocolate is created, it needs to be tempered. This is common knowledge to those who sits and has watched countless videos on working with chocolate. It's not tempered, and the reason why he hasn't replied back to my comment, is because I'm right. But it's not fake chocolate, if it were, it wouldn't have cocoa butter in it. Which is the beta 5 christal at which makes tempered chocolate, tempered.

+Mark II I used to work with chocolate, and the tempering process is just to insure the candy is shiny and looks good, and is not discolored. If it isnt tempered properly it will still taste good, it will just have a white coating, or bubbles or other imperfections. No homemade chocolate isnt tempered unless you feel like stalking a candy thermometer. Normally a machine will keep it the correct temp.

For everyone that says that the powdered sugar doesn't dissolve, maybe you should try adding just a little bit at a time and mix it with a fork to break up any clumps. Same goes for the powdered milk

+Ko-wing wong No it's not. Go get some raw cacao pods and some sugar cane reeds and a cow. Shuck and ferment the cocoa beans then mill until you have a super fine paste. Take an industrial food grade press and extract the cocoa butter oils. Dehydrate the remaining cocoa. Milk the cow, separate the fat out and dehydrate. Gather all of your ingredients on a counter top and then you'll be where Todd started from.
