how to make Mock Cream | old school recipes | Aussie girl can cook

the best alternative to cream. this mock cream is so easy to make. recipe written below.
small saucepan
1/2 cup sugar if you want it sweeter use caster sugar
1/3 cup boiling water
mix
put on stove on med
stir until all sugar melted
leave until it starts to boil
take off straight away leave to cool down to room temp
small bowl
125g butter chopped soft at room temp
1 tea spoon vanilla extract
beat on low til light and creamy
gradually add the cooled water sugar mix
as you drizzle it in keep beating on low
once it is all beaten in keep beating for half a min or so
store in fridge up to 3 days covered
before serving you must take out fridge for half hour so the mock cream can soften to room temp

I can remember the cream buns with mock cream, I used to love them after those hot dogs with those amazing Frankfurts. I have never found a Frankfurt that comes close to them. But mock cream ruled the tuck shop, is was the queen of every morning tea and lunch. Those memories are from so long ago, but they seem like yesterday. Lets vote Mock Cream in for our next pm. We would at least get some enjoyment out of it. Lol

Now can we get the cream bun recipe with mock cream and raspberry jam we used to get when we were kids, pleeeeease?? They had a light dusting of icing sugar on top too and a few sultanas inside the dough. They were absolutely scrumptious 😅

so what's the reason to use this instead of just heavily whipped cream?

mainly for deserts and cakes that can stay out of the fridge a lot longer. also if your out bush and cant get cream etc. some people prefer to norm cream. i love my whipped cream but in things like napolean cake yum. have a great weekend Jack 😊💜🍻
